Fantastic tail-gate party recipe - Beef Barbecups use refrigerated biscuits filled with ground beef, Sweet Baby Ray's barbecue sauce, brown sugar and topped with cheddar cheese. They are fantastic for parties and potlucks but also great for a quick weekend dinner when you're short on time and don't want to plan a full meal.
1 hamburger chopper to cut meat down in small pieces while frying
2 12-tin regular muffin pans
measuring cups
measuring spoons
1 wooden spoon
Ingredients
1lb.93% to 96% lean ground beefor sirloin
2tbsp.light brown sugarpacked
3/4cupsweet baby ray's barbecue sauceor your favorite BBQ sauce
1/4cuponionchopped
1cupsharp Cheddar cheeseshredded
2cans10-pack refrigerated biscuits
Instructions
Brown meat and onions in a large skillet, drain.
Use a hamburger chopper to cut meat down in small pieces while frying.
Add BBQ sauce and brown sugar to the meat, mix well.
Press biscuits into 20 greased or well-sprayed muffin cups.
Press dough in the bottom and around the edges of the cups.
Spoon meat mixture into cups and top with cheese.
Bake at 350° for 15-20 minutes.
Notes
NOTE: Spray muffin tins generously with cooking spray. This will prevent the muffins from sticking to the pans upon removal.NOTE: The original Pillsbury recipe calls for using grands, but I found they took longer to cook through so the cheese would burn.
