Chicken Provençal is an outstanding French entree. This delicious chicken main dish is filled with veggies including Great Northern beans, tomatoes, carrots, onion and garlic. Then it's seasoned with thyme and oregano providing wonderful flavors to complement the dish. I made this dish on a lark once because I had all the ingredients on hand. It was so tasty that it became a favorite!
1 3-quart baking dish or a 9x13" glass baking dish
Ingredients
4lbs.broiler-fryer chicken, cut up (or use about 6 boneless, skinless chicken breasts instead)
3tbsp.olive oil
1 1/2cupsonionchopped
3clovesgarlic minced, or use 1 heaping teaspoon of minced garlic from a jar
2cansGreat Northern beansrinsed and drained
29oz. candiced tomatoesdrained
3medium carrotspeeled and sliced 1/4” thick
1tbsp.instant chicken bouillonor use chicken broth
1 1/2tsp.dried thyme
1/2-1tsp.dried oregano
1/2 -3/4tsp.ground black pepper
1/2tsp.fresh parsley for garnish, if desired
1/2tsp.fresh thymefor garnish, if desired
Instructions
In a skillet, brown the chicken in oil; remove and set aside.
Sauté onion and garlic in drippings until tender.
Stir in remaining ingredients.
Spoon into a 3-qt. baking dish; arrange chicken pieces on top.
Cover and bake at 350° for 65-75 minutes or until chicken juices run clear.
Notes
NOTE: This may not sound like it would be so good, but this recipe is absolutely delicious and has a wonderful flavor.NOTE: For Gluten-Free diets, eliminate the chicken bouillon and substitute chicken broth and other seasonings of your choice.NOTE: Boneless, skinless chicken breasts may take longer to cook through completely.NOTE: You can also brown the chicken with the onions, garlic and carrots and stir it into the other ingredients (without heating them) and pour mixture into a greased baking dish.
