Baked Apple French Toast

This lovely breakfast casserole is wonderful for a holiday or special occasion breakfast like Thanksgiving, Christmas, Easter or Mother's Day. Apple pie filling is layered in the bottom, then custard-soaked cinnamon-raisin bread slices are layered on top. The bread is spread with melted butter and cinnamon sugar before baking. This is one spectacular French Toast recipe.

Equipment

  • 1 9x13" glass baking dish
  • 1 mixing bowl
  • 1 whisk
  • 1 wooden spoon
  • 1 pastry brush
  • 1 very small bowl
  • measuring cups
  • measuring spoons
  • 1 sharp bread knife to slice bread if using French bread

Ingredients
  

  • 21 oz. can apple pie filling or blueberry pie filling
  • 4 large eggs
  • 1 1/2 cups 2% milk
  • 1 1/2 tsp. vanilla extract
  • 10 slices day-old French bread or 8 slices day-old cinnamon-raisin bread
  • 2 tbsp. unsalted butter melted
  • 1/4 cup granulated sugar
  • 1 tsp. ground cinnamon

Instructions
 

  • Spoon pie filling into a greased 9x13” baking dish.
  • In a bowl, beat eggs, milk and vanilla with a whisk.
  • Dip bread slices in egg mixture for about 15-30 seconds; gently shake off excess.
  • Arrange 2 rows of bread on top of pie filling, overlapping slices slightly (if using French bread).
  • Brush bread with melted butter.
  • Combine sugar and cinnamon in very small bowl.
  • Sprinkle with sugar and cinnamon.
  • Bake, uncovered, at 350° for 30-35 minutes or until lightly browned.
  • Serve fruit side up.

Notes

NOTE: This is much easier to prepare if you soak one piece of bread at a time. Place the soaked piece of bread on top of the apple pie filling, brush with butter, and sprinkle with cinnamon sugar mixture. Then repeat for each slice of bread. The bread is too soggy to lift without tearing if you do this all at once.
 
NOTE: I have prepared this before and allowed it to sit in the refrigerator overnight before baking like many other breakfast casseroles. It works fine that way, too.
 
NOTE: If you have very wide bread like the cinnamon-raisin bread I used, you will only be able to fit one row of bread slices in the baking dish.
