You'll be delighted with this easy 4-ingredient Rosemary Garlic Potatoes recipe. This quick and easy side dish can be whipped up and oven-ready in about 8-10 minutes. It's a terrific side dish on nights when you don't have a lot of time to be stirring and watching over pots on the stove. The flavors of rosemary and garlic spruce up Yukon Gold Potatoes so wonderfully that every bite tastes heavenly. Vegan and gluten free.

Equipment

  • 1 10x15" glass baking dish or 9x13" glass baking dish
  • 1 large mixing bowl
  • 1 wooden spoon
  • measuring spoons
  • 1 sharp knife to cut vegetables
  • 1 cutting board

Ingredients
  

  • 2 lbs. Yukon gold potatoes (preferred over russet potatoes)
  • 1 1/2 tsp. dried rosemary leaves
  • 1 tsp. garlic powder
  • 2 tbsp. olive oil or avocado oil

Instructions
 

  • Wash and cut potatoes in wedges.
  • Place in a large mixing bowl.
  • Sprinkle with rosemary and garlic and toss well to combine.
  • Place potatoes in a greased 10x15” baking dish.
  • Drizzle or spray potatoes with olive oil.
  • Bake at 400º approximately 40-45 minutes, or until potatoes are fork tender.
  • Serve immediately. 

Notes

NOTE: You can peel the potatoes or leave them unpeeled if well-washed.
