If you enjoy old-world recipes with smoked sausage or kielbasa, sauerkraut and apples, this quick and easy main dish is for you! This recipe is made with 100% beef and is ready to eat in about 30 minutes. It also includes potatoes, making it especially hearty, filling and satisfying. If you need a snappy dinner idea because of sports practices or lengthy office meetings, Sausage Apple Supper is fantastic. Gluten free.
1lb.beef kielbasaor smoked sausage, cut in 1/4-inch pieces
1mediumVidalia onioncoarsely chopped (a sweet onion)
1tsp.salted butter(teaspoon not tablespoon)
32oz. jarsauerkrautrinsed well and drained
2lbs.Yukon gold potatoespeeled and chunked (or unpeeled red potatoes, chunked)
2largeHoney Crisp applesor 3 medium Gala apples, cored and sliced in 1/4-inch wedges
1cupapple juice
1/4tsp.sea salt
1/4tsp.ground black pepper
Instructions
In a large skillet, over medium heat, sauté sausage and onion in butter.
Sauté a minute or two until onions are tender.
Top with the sauerkraut, potatoes and apples.
Add the apple juice, salt and pepper.
Stir well to combine.
Bring ingredients to a boil.
Reduce heat; cover skillet and simmer for 18-20 minutes, or until potatoes are fork tender.
