Spicy Nacho Bake will captivate you from the first bite! This amazing Tex-Mex casserole has layers of Nacho Cheese Doritos and Cheddar cheese with a filling layer that includes ground beef, black beans, chili beans, corn, tomatoes and Taco seasoning. It's ooey, gooey, cheesy and delicious and can be ready to serve in about an hour. If you enjoy Tex-Mex dishes, this one's fantastic.
5cupssharp Cheddar cheeseshredded (see note below)
Instructions
Preheat oven to 350º.
Grease a 9x13” glass baking dish; set aside.
In a Dutch oven, brown the beef, onion and bell pepper over medium heat.
Cook until beef is no longer pink.
Use a hamburger chopper to chop the ground beef into small pieces while frying.
Drain off any grease.
Stir in tomatoes, beans, corn, tomato sauce and taco seasoning.
Bring ingredients to a boil.
Reduce heat and simmer, uncovered, for about 30 minutes. (Mixture will be thin).
Layer 3 cups of Doritos chips in the bottom of baking dish.
Spoon 4 2/3 cups beef mixture over top of Dorito chips.
Sprinkle beef mixture with 1 ½ cups cheddar cheese.
Repeat layers once.
Top casserole with 3 cups of Nacho Doritos Chips.
Top with 2 cups of cheese.
Bake, uncovered at 350º for 15-20 minutes, or until casserole is golden brown.
Garnish casserole with sliced green onions, if desired.
Notes
NOTE: I thought this recipe needed additional cheese. I added 1 ½ cups of cheese on top of each layer of beef filling and used two cups of cheese on top of the final layer of Doritos, totaling five cups of cheese total. The original recipe only used 2 cups of cheese on top of the final layer of Doritos.NOTE: If you use 93% or 96% lean ground beef, you will probably not have any grease to drain after cooking the ground beef.NOTE:Be careful NOT to overcook this casserole. About 15-20 minutes is all you need to get it heated through. The ingredients will dry out if you overcook this recipe.NOTE: While this recipe called for Nacho Cheese Doritos, I think regular tortilla chips would work also.NOTE: The original recipe seemed to have too many chips. I decreased the amount of Nacho Cheese Doritos for each layer from the 5 cups indicated in the original recipe to only 3 cups.NOTE: I used a mixture of sharp cheddar cheese, Fiesta cheese and Monterey Jack/Colby cheese.NOTE: You can find my Homemade Taco Seasoning here.
