Luscious green salad with fruit that's great for the summer holidays when peaches ripen. This one includes feta cheese, bacon and toasted walnuts and is gluten free.
2bagsromaine lettuce with shredded carrots and red cabbage(or spring mix, or any combination of lettuces)
2slices red onionthinly sliced
1cucumberthinly sliced
2-3largered, orange and yellow miniature pepperssliced
6stripsbaconcooked and broken into 1-inch pieces (make sure your bacon is gluten free)
1/2cupwhole walnutstoasted
4oz. pkg.feta cheesecrumbled
PEACH VINAIGRETTE:
2mediumripe peachesunpeeled
6tbsp.honeyor sugar
2tbsp.lemon juice
2tbsp.apple cider vinegar
1tbsp.rice vinegar
1/4tsp.salt
1/3cupcanola oil(avocado oil is a much better choice)
Instructions
SALAD:
In a large salad bowl, layer the romaine, miniature bell peppers, red onion, cucumber, bacon, walnuts, Feta cheese and 3 of the peaches, sliced and unpeeled, set aside.
To serve, place salad on plate.
Drizzle with salad dressing.
PEACH VINAIGRETTE:
Cut peaches in quarters; place in a blender. (Don't peel the peaches).
Add honey (or sugar), oil, lemon juice, vinegars and salt; cover and process until blended.
