1 large 10x15" glass baking dish

1 pastry brush

Ingredients

sweet potatoes
sliced in thin wedges

tbsp.
olive oil
1/2
tsp.
cracked salt and pepper
to taste
1/3
cup
olive oil
1
heaping tablespoon
dried parsley
2
tbsp.
fresh thyme
1/4
cup
fresh chives
diced, or about 1 tbsp. dried chives
1
heaping teaspoon
minced garlic from a jar
or 2 cloves garlic, minced
Instructions
Peel potatoes and cut into wedges.
Spread sweet potato wedges on the bottom of a 10”x15” baking dish that has been sprayed with olive oil cooking spray.
Brush sweet potatoes with 2-3 tbsp. olive oil, then sprinkle with cracked salt and pepper.
Cover dish with foil and bake at 350° for about 20 minutes.
Remove foil and turn potatoes over so other side can cook.
Bake another 20-25 minutes, covered, or until fork tender.
Meanwhile, to 1/3 cup olive oil, add parsley, thyme, chives, and minced garlic.
Stir to combine.
Brush garlic and herb butter over top of the sweet potato fries.
Place in oven for 5 minutes longer.
