White Chocolate and Cranberry Cookies

These fabulous oatmeal cookies are filled with white chocolate chips and dried cranberries for a marvelous, festive cookie that's great for holiday entertaining. Vanilla chips can also be used in this recipe for excellent effect and taste.

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1 cup sugar
  • 2 large eggs
  • 2 tsp. vanilla extract
  • 3 cups Gold Medal UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 1/2 cups rolled oats
  • 2 cups white chocolate chips
  • 1 cup dried cranberries Craisins

Instructions
 

  • In a medium bowl, cream butter and sugars until smooth.
  • Stir in eggs and vanilla, then flour, baking powder, baking soda and salt.
  • Mix well, stir in oats, white chocolate chips and cranberries.
  • Roll into balls and drop onto lightly sprayed cookie sheet.
  • Bake at 350° for 12-15 minutes or until done.
  • Makes between 4-5 dozen cookies.

Notes

NOTE: My cookies took close to 16 minutes to bake completely.
NOTE: White chocolate chips and vanilla chips each work really well with this recipe.
