White Chocolate Peach Brownies

White Chocolate Peach Brownies will make you drool. They're filled with peaches, white chocolate chips, walnuts and coconut and drizzled with a white chocolate glaze. They're terrific for any summer party or potluck when peaches are in season.

Equipment

  • 1 9x13" glass baking dish
  • 1 large mixing bowl
  • 1 sharp knife to cut and pare peaches
  • 1 electric mixer
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 nut chopper if walnuts are not previously chopped
  • 1 small sauce pan
  • 1 whisk
  • 1 spatula

Ingredients
  

BROWNIES:

  • 2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 sticks unsalted butter softened to room temperature
  • 1/2 cup light brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 1 cup white chocolate chips
  • 1 cup coconut
  • 1 cup walnuts finely diced (measure after chopping)
  • 2 cups peaches peeled and finely diced

WHITE CHOCOLATE ICING:

  • 1 cup white chocolate chips
  • 2-3 tbsp. heavy whipping cream or half-and-half or evaporated milk

Instructions
 

BROWNIES:

  • Mix butter, sugars, eggs, vanilla, baking powder, baking soda, and salt with an electric mixer until creamy.
  • Add flour, white chocolate chips, coconut, walnuts and peaches.
  • Stir with a wooden spoon to combine.
  • Grease the bottom of a 9x13” glass baking dish.
  • Spread brownie mixture into prepared dish.
  • Bake at 350° for about 40 minutes or until a toothpick inserted in center comes out clean.
  • Cool brownies.
  • Drizzle icing over top.

WHITE CHOCOLATE ICING:

  • Combine ingredients in small saucepan over low heat.
  • Whisk and stir until chips melt.
  • Drizzle icing over cooled brownies.
  • Allow icing to set about 15 minutes before cutting into bars.
