White Chocolate Cranberry Cookies

White Chocolate Cranberry Cookies are fabulous cookies filled with amazing flavor in every bite. The cranberries and white chocolate chips fill the air of your home with a delicate fragrance while baking. The tartness of the cranberries with the sweetness of the white chocolate chips provide a wonderful combination of excellent flavors. These festive holiday cookies are amazing.
These delicious treats are ones we make almost every year for Christmas cookie baking. I normally use vanilla chips instead of white chocolate chips, but both work excellently. This cookie is very rich, with wonderful flavors and texture. The craisins and oatmeal make it a rather hearty cookie and one your family will enjoy as much as all the people on our Christmas cookie baking list each year!
The recipe for White Chocolate Cranberry Cookies makes about 4 dozen cookies using a golf ball as a measure of the size your dough balls before baking. As I’ve stated in earlier posts we almost always roll dough into balls before baking rather than merely dropping by tablespoonfuls so we get a more uniform shape and not kooky-looking and odd-shaped cookies.
I received this recipe from Donna Gipson when I worked at Dallas Baptist University during the early 2000s trying to put my kids through college. I’ve always loved this recipe and have made it many times throughout the years. Everyone we’ve ever given the cookie to has always raved over it as well. When I initially made this recipe in July 2012 it was right after I began blogging. I remade and retook the pictures in November 2012, but still the pictures were taken with an iPhone so they were not crisp and clear. I also had too many Christmas props so the pictures were busy.
I recently remade these cookies for friends we were visiting in Florida (July 2016). I updated the pictures so you can have a better appreciation of these delicious cookies.

White Chocolate Cranberry Cookies are filled with oatmeal, white chocolate or vanilla chips and craisins for spectacular flavor.
These festive Christmas cookies are great for holiday entertaining. Your guests will love them.
Here’s what I did.
I used these ingredients.
Soften butter. Place in a large mixing bowl with sugar, brown sugar, eggs, vanilla, salt, baking powder and baking soda.
Cream with an electric mixer until smooth.
Add UNBLEACHED all-purpose flour. (Bleached flour toughens baked goods). Add oatmeal, craisins and white chocolate chips (or vanilla chips–whatever you’re using).
Stir with a wooden spoon to combine.
Form cookie dough into golf-ball sized balls and place on greased cookie sheets.
Bake at 350 for 12-15 minutes or until done.

We love making these delightful cookies for Christmas parties, but you can make them all year round because the ingredients are readily available.

WHITE CHOCOLATE CRANBERRY COOKIES
(Recipe given to me by Donna Gipson, when we both worked at Dallas Baptist University, Dallas, TX)
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1 cup sugar
- 2 eggs
- 2 tsp. vanilla
- 3 cups Gold Medal UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1 ½ cups rolled oats
- 2 cups white chocolate chips
- 1 cup dried cranberries (Craisins)
- In a medium bowl, cream butter and sugars until smooth.
- Stir in eggs and vanilla, then flour, baking powder, baking soda and salt.
- Mix well, stir in oats, white chocolate chips and cranberries.
- Roll into balls and drop onto lightly sprayed cookie sheet.
- Bake at 350° for 12-15 minutes or until done.
- Makes between 4-5 dozen cookies.
