Cheesy Pizza Treats

Teresa Ambra

Cheesy Pizza Treats are my favorite miniature pizza snack. Wow, these are terrific! I LOVE pizza. For that matter I like anything Italian with tomato sauce. Add pepperoni into the mix and I like it even better. These tasty miniature pizzas are wonderful. So quick and easy. Really.

They only take about 10-15 minutes to assemble and another 10 minutes to bake! Maybe 5-10 minutes to cool. Then they’re ready. Yay! I love easy. And, how can you lose with a 4-ingredient recipe? If your family loves pizza you will love this tasty way to make miniature pizzas for snacks or even dinner!

This recipe is kid-friendly and your kids will probably even want to help you make it. I was teaching a cooking class for first- through third-graders and one for fourth- through sixth-graders yesterday at our church and we made this fabulous recipe. All the kids had fun making this tasty treat.

Cheesy Pizza Treats are an excellent choice for Super Bowl parties or other special occasions. Guys really love these little pizza treats. They are a delicious and satisfying snack for lunch or serve as an appetizer. These miniature pizzas are also a scrumptious addition to any potluck or to take to soccer games and other events. They are actually good hot or cold.

If you want more variety consider making them with lots of veggies, Hawaiian style, or with sausage, or any other way you like pizza. This recipe uses refrigerated biscuits for the crust, then layer with spaghetti sauce, pepperoni, and mozzarella cheese. You can add sliced mushrooms if you prefer.

If you’re looking for a superb appetizer then consider trying Cheesy Pizza Treats sometime soon. I love making these miniature pizzas, and have made them several other ways as well. Cheesy Pizza Treats are so easy to make. Really, you can’t go wrong with a 4-ingredient recipe!

This is a great appetizer for football or superbowl games, or anytime you’re having a group of people over. I taught two cooking classes at our church yesterday for 1st through 3rd graders and 4th through 6th graders, and the kids just gobbled these miniature pizzas right on up. Some of them had 3 of them! Even one I know to be a picky eater enjoyed this great treat.

Here’s what I did.

I use regular small biscuits rather than grands because the grands seem to overwhelm the pizza and it tastes too much like a biscuit and not enough like pizza.

Spray your muffin pan very generously with cooking spray. Take the dough and stretch it out and flatten it between your hands as much as possible. Place it into the muffin tin. Use your hands to stretch the dough and get it as high as possible into the muffin tin without tearing the dough.

Now add spaghetti sauce — any kind will work. Spoon a couple of tablespoons of sauce into the biscuit. If you add too much sauce the pizza treats get too soupy.

Add a slice of pepperoni on top of spaghetti sauce. If you want to add other vegetables like green peppers or mushrooms, add them BEFORE adding the pepperoni.

Add mozzarella cheese. Make sure none of the cheese is on top of the pan or above the level of the sauce because it will stick to the pan otherwise. Tuck all the cheese into the individual tins and keep it from going over the edge. This will help tremendously in getting the pizza treats out of the pan later.

Bake Cheesy Pizza Treats for 12-15 minutes at 400 degrees. Allow to cool about 5-10 minutes before removing from pan.

Equipment

  • 2 or 3 12-tin regular muffin pans
  • 1 wooden spoon

Ingredients

  • 3 cans refrigerated biscuits
  • 4 oz. can mushrooms sliced, drained (optional)
  • 58 oz. jar spaghetti sauce any flavor (two 29-ounce jars)
  • 6 oz. pepperoni sliced
  • 8 oz. pkg. Mozzarella cheese shredded

Instructions

  • Spray muffin tins with cooking spray.
  • Fit biscuits into muffin tins.
  • Spread 2 tablespoons of sauce on bottom of biscuit in each tin.
  • Layer with pepperoni slice, mushroom pieces or slices, if using, and then sprinkle with a little cheese.
  • Bake at 400 about 15 minutes or until done.

Notes

NOTE: I use small refrigerated biscuits in the muffin tins, rather than Grands. They seem to work better and you don't end up with an "all dough" miniature pizza.

NOTE: Before baking, do your best to make sure the cheese is inside the tin rather than strands laying on top of the tin. Otherwise the cheese will stick after baking, and it makes the pizzas more difficult to get out of the pan.
