Teresa’s Bake Shop – Christmas Cookie Extravaganza – 2012

Everyone loves a good Oatmeal Raisin Walnut Cookie and this is one of them. Lots of oatmeal, lots of raisins (or you can substitute chocolate chips), and lots of delicious walnuts. This cookie is also filled with cinnamon and nutmeg so the spices also permeate the cookie as well and provide wonderful flavor.

Oatmeal Raisin Walnut Cookies have lots of crunch on the outside but plenty of wonderful chewiness on the inside. If you like oatmeal and raisins in cookies you will enjoy this cookie. It has terrific flavor and texture.

This is the basic recipe off the Quaker Oatmeal box and Hammons Pantry recipe for Black Walnuts and Oatmeal Cookies with a few minor adaptations. We made this cookie for our yearly Christmas Cookie Extravaganza this year.

As far as cookies go it’s relatively easy to put together. I would recommend pressing the tops of the cookies with a fork in criss-cross fashion like you do for peanut butter cookies before baking. I pressed them down slightly with my hands but the criss-cross pattern of a fork would look prettier!

When I initially posted this recipe in November 2012, my pictures were taken with an iPhone 3 camera which made them blurry, grainy and somewhat dark. On top of that I was just getting the hang of presentation, so my pictures were too gaudy, too many Christmas decorations, just too much, period!

Sometimes less really is more. 😉 I’ve been remaking all my first year recipes to get better pictures and this one came up last month (September 2015) to make.

It’s really an easy and delicious recipe. I adjusted the flour a little by decreasing the recipe 1/2 cup from the original so they wouldn’t be quite so bulky. I scooped the dough with a cookie (or ice cream) scoop and placed the dough on cookie sheets. I didn’t press the cookies down, but you can certainly do that if you prefer to flatten out the cookie somewhat. No matter what you do, these cookies are irresistible. 🙂

I used these ingredients.

Soften butter and put in large mixing bowl. Add brown sugar, white sugar, eggs, vanilla, salt, baking soda, nutmeg and cinnamon.

Mix all the ingredients together with an electric mixer until smooth.

Add UNBLEACHED all-purpose flour (bleached flour toughens cookies). Add oatmeal, raisins and walnuts. Stir with a wooden spoon until well combined.

Scoop mixture with ice cream or cookie scoop and place on greased cookie sheets. Press down in criss-cross fashion with a fork, if desired.

Bake at 350 for 10-12 minutes or until done. My new oven cooks much faster than the one in our previous house. Because I used a really large scoop, my cookies took about 15 minutes to bake. A smaller scoop will take about 10-12.

  • 1 nut chopper unless nuts are already chopped

  • 3 cups oatmeal
  • 1 cup finely diced black walnuts or regular walnuts black walnuts provide increased flavor!
  • 1 1/2 cups UNBLEACHED all-purpose flour bleached flour toughens cookies
  • 1 1/4 tsp. cinnamon
  • 3/4 tsp. salt
  • 1 large egg
  • 1 cup raisins or chocolate chips
  • 3/4 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1 1/4 cups unsalted butter softened
  • 1 tsp. pure vanilla extract
  • 1/4 tsp. nutmeg
  • 1 tsp. baking soda

Instructions
 

  • Mix sugars, egg, butter, vanilla, nutmeg, cinnamon, salt and baking soda with an electric mixer.
  • Stir in flour, raisins, black walnuts and oatmeal with a wooden spoon.
  • Don’t use a mixer or cookies will be overmixed and toughen.
  • Scoop dough with a large cookie scoop and place on cookie sheets that have been sprayed with cookie spray.
  • Bake at 350° for 12-15 minutes.
  • Rotate cookie sheets on oven racks half way through baking time.
  • Remove from oven; cool.

Ingredients
  • 3 cups oatmeal
  • 1 cup finely diced black walnuts or regular walnuts (black walnuts provide increased flavor!)
  • 1 ½ cups Gold Medal UNBLEACHED all-purpose flour (bleached flour toughens cookies)
  • 1 ¼ tsp. cinnamon
  • ¾ tsp. salt
  • 1 egg
  • 1 cup raisins or chocolate chips
  • ¾ cup brown sugar
  • ½ cup white sugar
  • 1 ¼ cups Land O’ Lakes unsalted butter
  • 1 tsp. McCormick pure vanilla extract
  • 1/4 tsp. nutmeg
  • 1 tsp. baking soda
Instructions
  1. Mix sugars, egg, butter, vanilla, nutmeg, cinnamon, salt and baking soda together.
  2. Stir in flour, raisins, black walnuts with a wooden spoon.
  3. Don’t use a mixer or cookies will be overmixed and toughen.
  4. Scoop dough with an ice cream scoop and place on cookie sheets that have been sprayed with cookie spray.

Take these along to your office and everyone will enjoy them. We like oatmeal raisin cookies especially since I already have tons of recipes with chocolate chips, but if you don’t like raisins you can substitute chocolate chips, butterscotch chips, peanut butter chips, cinnamon chips, craisins, dried cherries or dried blueberries and this cookie will still be delicious.
