Lemon Coconut Pecan Cookies are spectacular. My hat’s off to Tamara Leigh: The Kitchen Novelist for sharing this great tasting cookie on her website a few weeks ago. As I was drooling over the tastes of lemon, coconut, and pecans I decided I would try this cookie as part of my Christmas Cookie Extravaganza this year. Boy, am I glad I did. The smells of coconut and lemon permeated my kitchen and dining room for hours. I loved it!

These cookies have a delectable lemon essence to die for. I found the results spectacular (and I think my recipients will too!) This cookie is so easy to make it will be a very welcome addition to your Christmas cookie baking since it doesn’t have tons of intricate steps like so many Christmas cookies do. Lemon juice and real lemon zest amp up the flavors in this cookie astronomically.

You get a lot of bang for your buck with this recipe and, actually, it’s quite economical to make. So you may want to try this delicious jewel as part of your baking this Christmas season. Your family and friends will be so very glad you did.

When I initially published this recipe back in December 2012 for my Christmas Cookie Extravaganza, it was back in the early months of my blog and my pictures were too busy with Christmas decorations and not clear enough due to use of an iPhone 3 camera (which was all I had at the time).

I recently remade these cookies (August 2015) for friends who were moving to a new home and took some new pictures which better reflect the texture of Lemon Coconut Pecan Cookies. Our friends put some of the cookies in the freezer and pulled them out a week later for a baby shower. Everyone raved over them! You will too.

I used these ingredients.

Soften butter. Add sugar, eggs, lemon juice, lemon zest, vanilla, salt, baking powder and baking soda.

Mix all the ingredients together with an electric mixer. You can see the flecks of lemon peel in the dough at this point.

Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add coconut and pecans.

Stir all the ingredients together with a wooden spoon. Don’t use an electric mixer or it will toughen the cookies.

Scoop dough with an ice cream scoop or cookier scooper and place on cookie sheets that have been sprayed with cooking spray.

Bake 10-12 minutes at 350 or until done. Mine may have taken a little longer.

  • 3 large 18x26" cookie sheet pans
  • 1 electric mixer
  • 1 large mixing bowl
  • 1 wooden spoon
  • 1 lemon zester or grater
  • measuring spoons
  • measuring cups
  • 1 spatula
  • 1 nut chopper if nuts are not previously chopped

Ingredients
  

  • 1 cup unsalted butter softened
  • 2 cups granulated sugar
  • 2 tsp. vanilla extract
  • 2 large eggs
  • 2 tbsp. fresh lemon juice
  • 3 tsp. lemon zest
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 3 cups UNBLEACHED all-purpose flour bleached flour toughens cookies
  • 1 cup pecans chopped (measure after chopping)
  • 1 cup coconut

Instructions
 

  • Mix butter, granulated sugar, vanilla, eggs, lemon juice, lemon zest, salt, baking powder, and baking soda with an electric mixer until smooth.
  • Stir in flour, pecans and coconut with a wooden spoon until very well combined.
  • Bake 10-12 minutes at 350° or until done.
  • Rotate cookie sheets on oven racks half way through baking time.
  • Cool completely.
