Crockpot Beef Tips and Veggies Over Rice is absolutely sensational. As I was looking through recipes to use up stew beef and steaks in the freezer I came across the idea of making beef tips. Unfortunately, every single recipe I looked at had either canned mushroom soup or gravy mix in the ingredients.

I already have recipes like that and I was looking for a healthier version. Finally, I decided to try making my own version with some vegetables and using beef broth instead of soups or gravy mix. It turned out spectacularly! I loved the taste of this dish even though it was only seasoned with salt and pepper. All the veggies and beef broth provide lots of stimulating flavors that amaze the taste buds. I served the beef tips over soaked brown rice.

I was so pleased that Crockpot Beef Tips and Veggies Over Rice turned out so tasty. One of the wonderful things about this recipe is I made it in the crockpot! I love crockpot cooking and this recipe was so easy because of that. Basically, after cutting everything up, you dump it in the crockpot and stir at appropriate times. I’m going to recommend one change from my “how-to” pictures below.

Since I used baby carrots in this recipe (and because they are dense and large), they need to be added at the beginning with the meat. They were not quite done when everything else was so I had to microwave them about 5 minutes to finish cooking them. Otherwise, use the petite baby carrots. This recipe takes a total of four hours. The first two hours I cooked the meat, onions, leeks and mushrooms (and the carrots need to be added here), then after two hours, the red pepper and green beans can be added.

This recipe has about 10 minutes of chopping/prep work overall and then it cooks in the crockpot. I used a gluten free flour to dredge the beef tips in, so that thickened the sauce made from the beef broth as the recipe cooked. I wanted to make a beef tips recipe with extra veggies, so by adding the green beans and carrots this recipe is a complete meal in itself. I prefer eating more vegetables than meat, but if you and your family like a lot of meat, then increase the meat to three pounds if you like.

It’s so quick and easy which is really helpful on days where you don’t have a lot of time to spend preparing meals. I garnished this dish with green onions and parsley. I prefer meat dishes with a lot of vegetables, but if your family prefers more meat, then increase the amount of beef to 2 1/2 to 3 lbs. I served the meal with Crusty Bread.

Every forkful of Crockpot Beef Tips and Veggies Over Rice is mouthwatering and delicious. The savory tastes of the beef broth/sauce were amazing–especially considering I didn’t add a lot of herbs to this recipe.

Start with your steaks. I cut them in thin strips. Place gluten free flour on a plate and dredge the meat in the flour. Make sure all sides are coated well. When finished, spray crockpot with olive oil cooking spray and toss the uncooked, dredged beef strips into the crockpot.

Add sliced mushrooms, onions, sliced, and separated into rings, leeks, salt, pepper and beef broth.

Add baby carrots at this time also, and stir to combine. Cook for two hours on high in your crockpot.

Add a whole red pepper, cut in strips. Cut the ends off green beans and add to the crockpot. The baby carrots should have been added in the beginning so they will have time to cook all the way through. Otherwise, you may have to microwave them like I did to get them done when the other vegetables have cooked. 🙁   Stir all the ingredients together and cook on high an additional 2 hours.

Instead of baby carrots, petite baby carrots would work better here.

To serve: Spread cooked rice on a plate. Top with Beef Tips and Veggies. Add some Crusty Bread and dip into the sauce to sop some of it up!  I prefer more veggies and less meat (so I heaped the meat onto my husband’s plate!)

  • 1 sharp knife to cut meat and vegetables
  • measuring cups
  • measuring spoons
  • 1 wooden spoon

Ingredients
  

  • 1 1/2 lbs. eye of round sirloin steaks cut in strips (or substitute stew beef)
  • 1/2 to 3/4 cup gluten free flour or you can use regular flour if you don't need the recipe gluten free
  • 8 oz. fresh mushrooms sliced
  • 2 large onions sliced
  • 2 leeks green top removed, washed thoroughly and sliced or diced
  • 1 red pepper cut in strips
  • 1 cup baby carrots petite baby carrots, preferred
  • 1 cup green beans ends cut off
  • 1 tsp. sea salt or kosher salt
  • 1/2 tsp. ground black pepper
  • 32 oz. container beef broth
  • 2 tbsp. green onions diced, for garnish
  • 1 tsp. fresh parsley chopped, for garnish
  • 1 1/2 cups brown rice soaked at least one hour

Instructions
 

  • Cut steaks into strips and dredge in flour.
  • Spray crockpot with olive oil cooking spray.
  • Add dredged, uncooked, steak strips, mushrooms, onions, leeks, baby carrots, salt, pepper, and beef broth.
  • Cover with lid and cook on high approximately 2 hours.
