Roasted Paprika Corn has a wonderful, even delectable taste. The corn is spread with a butter sauce consisting of paprika, garlic salt, pepper and parsley. Then, I bake the corn in the oven wrapped in either waxed paper or aluminum foil. After 30 minutes in the oven the corn is ready. It’s a great side dish for my Barbecue Pork but it would work just as well with BBQ Brisket or any other main dish.

Years ago when we were visiting my sister-in-law she made a delicious grilled corn recipe with paprika, butter, salt and pepper that was sensational. When she told me what was in the corn, I couldn’t believe it.

I was in the mood for corn last week and wanted to do a take off on DeEtte’s grilled corn. But, instead, I wanted to roast the corn in the oven and add some parsley to the coating. There is just something about the combination of corn, butter, salt and paprika that tastes amazing to me! I never would have thought paprika would go well with corn-on-the-cob, but it is so flavorful.

This is a delightful and creative way to use up corn-on-the-cob from your garden or CSA. Because of the abundant and cheap supply at the grocery store at the moment, this is a tasty recipe you should give a try. On top of that, this six-ingredient recipe is so quick and easy, you can have this ready to go in the oven in about 5 minutes! And if you needed another reason, this is really inexpensive!

I initially posted this recipe in July 2013. My pictures were okay, but I wanted to remake this fantastic recipe again anyway.

Our church’s college group had a volleyball night a couple of weeks ago (July 2019). The director was making hamburgers and cheeseburgers and asked me to make baked beans. I also decided to remake this delicious corn and toss in a Kiwi-Strawberry Spinach Salad and some Oatmeal Scotchies.

The two dishes the kid’s raved about??? The corn and the salad. Go figure. 🙂

Ah, yes, it certainly was delicious! Roasted Paprika Corn is healthy, gluten free, and low calorie. If you use avocado oil you can easily make this recipe vegan. I served it with Calico Baked Beans and Kielbasa.

We like to serve it for summer holidays like Memorial Day, Fourth of July and Labor Day. It's healthy, low calorie and gluten free.

  • 1 9x13" glass baking dish
  • 1 pastry brush
  • measuring cups

  • corn skewers
  • aluminum foil or waxed paper to wrap corn in

Ingredients
  

  • 4 ears corn on the cob shucked
  • 4 tbsp. unsalted butter melted
  • 2 tsp. paprika
  • 1 tsp. garlic salt
  • 1/2 tsp. ground black pepper
  • 1 tbsp. dried parsley

Instructions
 

  • Melt butter in a small measuring cup.
  • Add seasonings and stir.
  • Place a single corn cob on a piece of aluminum foil or waxed paper.
  • Brush butter/paprika mixture over top of corn and coat all sides generously.
  • Fold side pieces of foil or waxed paper to the center of the corn and then roll up corn.
  • Place in glass baking dish or on a cookie sheet and bake at 350° for about 30 minutes.
  • Remove aluminum foil or waxed paper.
  • Secure ends of corn with corn skewers and serve.

Notes

NOTE: This recipe can also be used on the grill. Substitute aluminum foil for the waxed paper and grill until done.
