Crockpot Green Bean Casserole is NOT your traditional Green Bean Casserole recipe! No, this one is SO much better! It’s made with cream of celery soup, cheddar cheese, and water chestnuts along with lots of French fried onions. A big plus is you make it in the crockpot so it’s incredibly easy.

I just place two 16-oz. pkg. frozen green beans in the crockpot, top with the soup mixture and French fried onions and allow the dish to cook on low for several hours before adding the final amount of French fried onions and cheese on top about 20 minutes before serving.

I’ve made this recipe a LOT for holidays throughout the years. With my old crockpot, I used to cook this about 1o hours on low before adding the final ingredients. But my newer crockpot cooks everything really fast so this was ready in about half that time. Back in the early 1990s we lived away from family, so we didn’t make the annual trek 1,500 miles away to see them very often–especially at Thanksgiving.

Our church family became our family. One of those Thanksgivings we went to Pam Johnson’s home, and this delightful casserole was on the menu. I liked it so much better than the traditional Campbell Green Bean Casserole I had served up until that time. The water chestnuts gave it a really nice crunch, and all the cheese and cream of celery soup provided great flavor.

We had so much sumptuous food at that Thanksgiving celebration. Several families came to that celebration. Everyone brought some of their favorite foods. I remember bringing my Strawberry Pretzel Salad and Corn Pudding which were frequently on holiday menus. There were several families that came to Pam’s home that day. We all enjoyed lots of football, the kids all played together and we stuffed ourselves several times.

This recipe is not low in calories or particularly healthy, but it is one of those recipes we splurge on for holidays or special occasion meals throughout the year. I made this for Thanksgiving this year and, oh, yum!

One of the main reasons I like to make it is because almost everyone will eat green beans. The second reason is I don’t have to use oven space since it cooks in the crockpot. That is really helpful when you’re planning a gigantic meal for family and friends–even when you are blessed with two ovens like I am.

I used these ingredients. I usually use French-cut green beans but I couldn’t find them at the grocery store. I substituted fine whole green beans instead.

Spray your crockpot with cooking spray. Add two 16-oz. bags of FROZEN green beans.

Mix cheddar cheese, drained water chestnuts, cream of celery soup and water.

Stir to combine.

Place mixture on top of the green beans. It will cook down as it cooks in the slow cooker.

Add half of a large can of French fried onions.

Cook in your slow cooker on low until done. My old crockpot took 8-10 hours. My new crockpot cooks this in 4-5 hours. Adjust according to the speed of your crockpot.

About 20 minutes before serving add remaining French fried onions.

We had this for Thanksgiving the first year I made it and served it with Candied Sweet Potatoes. (Along with a lot of other things!) This time I served it with Spaghetti Pie.

  • 1 1/2 cups sharp cheddar cheese shredded
  • 1 can water chestnuts sliced and drained
  • 1/4 cup water
  • 1 large can French fried onion rings divided use
  • 1/3 cup cheddar cheese for garnish, if desired

Instructions
 

  • Put green beans (frozen) in bottom of crock pot sprayed with cooking spray.
  • Combine soup, cheese, water chestnuts and water in a small mixing bowl.
  • Spoon mixture on top of green beans.
  • Sprinkle ½ can of onion rings on top.
