Apple Cranberry Almond Cole Slaw

This scrumptious Apple Cranberry Almond Cole Slaw is not only delicious but healthy as well! Apples, dried cranberries, almonds, green onions, celery and matchsticks carrots team up with shredded cabbage and a tasty yogurt-style salad dressing that’s low calorie and gluten free. It’s an absolutely fabulous way to make cole slaw and tempt even the most finicky appetite.
When I saw this recipe on Pinterest last year, I knew I would have to make it once summer time rolled around. I added a few ingredients to the original recipe and used a completely different homemade dressing. The result was spectacular. I have to admit I love Cole Slaw. Mom used to make it every time she served her Homemade Fried Chicken and Gravy.
I have versions with pineapple and marshmallows and even a KFC Copycat version. Both are fantastic. While I enjoy Mom’s plain version, there’s nothing like Cole Slaw with other stuff added in besides cabbage and carrots. Apple Cranberry Almond Cole Slaw does the trick. The crunchiness from the nuts, apples, celery and craisins adds so much to a plain cole slaw that it raises the level to one of those “must try” recipes!
I took a batch of this cole slaw to a potluck at our church in May. We have several people in our church that are on gluten free diets so I always try to bring something for them. This was one of those recipes that got cleaned out rather quickly. I saved enough to bring home so I could have a bowl, but that was about it.
Because I needed to make this the day before the event I dipped the apple slices in lemon juice and laid them out on paper towels before adding to the salad. I also added the dressing the day beforehand as well. Twenty-four hours later the salad was still crisp and tasty and the Gala apples I used were not discolored. So while it may be optimal to serve this the same day, I made it 24 hours in advance and had no problem.
Apple Cranberry Almond Cole Slaw really doesn’t take very long to prepare. If you purchase pre-shredded cabbage, it’s even faster. If you’re interested in making a cole slaw recipe for a summer holiday menu, backyard barbecue or grilling out with friends, I can’t recommend this salad highly enough. It’s a great way to prepare cole slaw and everyone will love it.

The flavors of this cole slaw are sensational. It’s a wonderful salad to bring to potluck dinners.
Gala apples are sweet and my apple of choice for this salad. I like the fact that this salad is much healthier than most cole slaws made with mayo or Miracle Whip.
Here’s what I did.
I used these ingredients for the cole slaw.
Cut apples julienne style. Dip in lemon juice and pat dry on paper towels.
Place green onions, celery, matchsticks carrots, apple slices, almonds and craisins in a large mixing bowl.
I used these ingredients for the salad dressing.
Place Greek yogurt in a small mixing bowl. Add honey, celery seed, salt, pepper, and apple cider vinegar.
Whisk ingredients to combine.
Add shredded cabbage to bowl with other fruits, veggies and nuts. Pour salad dressing over top.
Stir ingredients with a wooden spoon to combine. Refrigerate until ready to serve.
This is a great salad to make for holiday menus. Whether summer holidays or winter, this is a perfect accompaniment to many meals.

APPLE CRANBERRY ALMOND COLE SLAW
(Recipe adapted from Cooking Classy)
GREEK YOGURT SALAD DRESSING
(My own concoction)
- 1 small cabbage, shredded
- 1 ½ cups matchsticks carrots
- 2 large Gala apples, sliced into matchsticks
- ½ cup sliced green onions
- 1 rib celery, diced
- ¾ cup sliced almonds
- ¾ cup dried cranberries
- lemon juice
- Place cabbage, carrots, green onions, celery, almonds and cranberries in a large salad bowl.
- Toss apples with lemon juice to prevent discoloration.
- Drain on paper towels.
- Add to other ingredients with dressing and stir to combine.
- Refrigerate until ready to serve.
- 1 cup Chobani’s plain Greek yogurt
- 1/3 cup honey
- 2 tbsp. apple cider vinegar
- salt & pepper to taste
- ¼ tsp. celery seed
- Combine ingredients and whisk until smooth.
- Pour over slaw ingredients and refrigerate until ready to serve.
This amped up cole slaw is an awesome treat during the summer holidays. If you dip your apple slices in lemon juice you can make this salad a day in advance with no ill effects.
Cole Slaw never tasted so wonderfully as it does with all these fruits, nuts and veggies!
