Blackberry Almond Bars are very scrumptious treats. I mean who doesn’t enjoy blackberries or blackberry preserves? These berry filled bars are not too difficult to make and combine two really great flavors: blackberries and almonds. Double yum.

This tasty dessert start with a simple three-ingredient shortbread crust. After baking the crust, you add a blackberry preserve filling layer topped with sliced almonds and then bake the dessert again. It is super delicious.

My husband likes to give away cookies whenever he meets up with friends, co-workers, or others affiliated with his work. I try to keep the freezer well-stocked so he can bring a tub filled with them wherever he goes. A couple of weeks ago I was remaking a batch of Apricot Almond Bars.

I knew my freezer was getting low on cookies so I decided to make this simple recipe with four different flavors, Apricot (the original recipe), Cherry, Orange Marmalade and Blackberry. All of them came out so wonderfully ooey and gooey.

If you’re looking for a delightful recipe to share with company, at family reunions, potlucks or for holiday baking, then Blackberry Almond Bars is a fantastic one to share. I do recommend freezing or refrigerating them before cutting to make that process a little easier. But after cutting if you prefer gooey, then keep them at room temperature for a day or two before refrigerating (if they last that long!) 🙂

I used these ingredients.

Soften butter. I microwave it until it’s half way between softened and melted so it is easier to work with. Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add powdered sugar.

Stir ingredients to combine.

Spray a 9×13″ glass baking dish with cooking spray. Press crust ingredients into pan firmly.

Bake at 350 for approximately 15-18 minutes.

Meanwhile, combine sugar, egg, blackberry preserves, vanilla and butter.

Whisk ingredients to combine. Pour over hot crust layer.

Top with sliced almonds.

Bake at 350 an additional 15-20 minutes or until set.

Refrigerate or freeze before cutting into bars.

  • 2 mixing bowls
  • 1 wooden spoon
  • 1 whisk

Ingredients
  

CRUST:

  • 1 1/2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 3/4 cup confectioners’ sugar
  • 3/4 cup unsalted butter softened or melted

TOPPING:

  • 1 egg slightly beaten
  • 1/2 cup granulated sugar
  • 8-10 oz. blackberry preserves
  • 1 tbsp. unsalted butter softened or melted
  • 1/2 tsp. vanilla extract
  • 3/4-1 cup almonds sliced

Instructions
 

CRUST:

  • In a mixing bowl, stir flour, granulated sugar and butter.
  • Spread into the bottom and ½ inch up the sides of a 9x13” glass baking dish that has been sprayed well with cooking spray.
  • Bake at 350° oven for 15-18 minutes or until lightly browned.

TOPPING:

  • For topping, beat egg, sugar, preserves, butter and vanilla in a mixing bowl with a whisk until smooth.
  • Spread evenly over hot crust.
  • Sprinkle with almonds.
  • Bake at 350° for 15-20 minutes. Cool.

Notes

NOTE: These bars are much easier to cut if you freeze for one hour or refrigerate a couple of hours before serving.

    Teresa, can these bars be kept in the freezer for a period of time? Will the crust get too hard?

      Hey, Joanne. I think you can freeze these bars for a couple of months. But if you get beyond three months they may start drying out somewhat. Hope you enjoy them.
