Beef Tips with Quinoa is a delightful crockpot recipe that’s not only healthy, but delicious as well. It’s a clean-eating entree that includes beef round steak, bell peppers, onions, leeks, carrots, celery and peas along with a rice and quinoa blend. It’s seasoned to perfection and so easy to make.

The ease of tossing everything in the crockpot makes it a wonderful family recipe that’s great for weeknights when you’re super busy.
This is one of those fun recipes that was created on the spur of the moment. I saw a deal on round steaks at the grocery store one day. Then I found a rice/quinoa blend that I wanted to try with it. I added lots of veggies and it turned out absolutely fantastic.
I prepared a meal back in November for friends who had just moved into a new home. I also sent along about half of a batch of Beef Tips with Quinoa so they would have an extra meal. They all loved this entree, including the teenagers!
If you’re looking for a sumptuous beef entree that you can make in the slow cooker, then give Beef Tips with Quinoa a try. You’ll find that this will be one of those recipes that will go on your regular rotation. It’s that good!

Beef Tips with Quinoa is a delightful beef entree that’s healthy, low calorie, clean-eating and gluten free.

Serve Beef Tips with Quinoa garnished with fresh parsley or thyme for added flavor.

This entree is very filling and satisfying.
Here’s what I did.

I used these ingredients plus Worcestershire sauce. I did not use the gluten free flour.

Pour beef broth into a crockpot.

Add round steak cut in strips.

Add green and red bell peppers cut in strips, onions, leeks, celery, petite baby carrots, and garlic.

Add seasonings and Worcestershire sauce. (I used a gluten free Worcestershire sauce.)

Cook on high heat about 2 to 2 1/2 hours. Add frozen peas and rice/quinoa blend. Cover with crockpot lid.

Cook an additional hour on low until rice and quinoa are fully cooked and fluffy.

This is great comfort food along with being a real stick-to-the-ribs meal.

Serve Beef Tips with Quinoa with your favorite bread or choose a gluten free bread.

This savory and scrumptious one-dish meal is also wonderful to serve company.

Beef Tips with Quinoa

Beef Tips with Quinoa is a savory and sumptuous beef entree that’s made in the slow cooker. It uses beef, a rice/quinoa blend, bell peppers, carrots, peas, celery, onions, leeks and garlic. This recipe is seasoned to perfection and is healthy, low calorie, gluten free and clean eating. Dumping all the ingredients in the crockpot makes for a very easy week night dinner option. It’s also a great one-dish meal for company.
- large crockpot
- sharp knife
- measuring cups
- measuring spoons
- wooden spoon
- soup ladle
- 2-3 lbs. round steak (cut in thin strips )
- 32 oz. beef broth (or more as needed )
- 1 large onion (diced)
- 1 leek (green top removed, washed thoroughly and sliced)
- 2 large cloves garlic (minced)
- 1 green bell pepper (cut in strips)
- 1 red bell pepper (cut in strips)
- 2 ribs celery (sliced on the diagonal)
- 2 cups petite baby carrots
- 1 cup green peas
- 1 1/2 tsp. sea salt
- 1 tsp. ground black pepper
- 1 tsp. dried parsley
- 1 tsp. dried thyme
- 1 tsp. dried marjoram
- 1 tbsp. Worcestershire sauce ((Lea & Perrin’s is gluten free))
- 1 cup rice and quinoa blend
- 1 tsp. fresh parsley (minced, or fresh thyme, minced, for garnish, as desired)
- Pour beef broth into a large crockpot.
- Add steak, onions, leeks, garlic, bell peppers, celery, carrots, salt, pepper, parsley, thyme, marjoram and Worcestershire sauce.
- Cook on high heat about 2 to 2 ½ hours.
- Add rice and quinoa blend and peas.
- Turn crockpot on low heat.
- Heat about 1 additional hour until heated through.
- Garnish with fresh thyme or parsley, as desired.
NOTE: Avoid the temptation to add more rice and quinoa. While the recipe will be soupy when you add it to the crockpot, once the rice and quinoa cook they expand and will fill up the crockpot! You may even find it necessary to add additional beef broth or water to thin slightly.
NOTE: If reheating this, you will probably have to add additional beef broth or water as the quinoa and rice will absorb all the liquid in the recipe.

I made this entree thick, but if you prefer it more soup-like, you can add additional beef broth or water. The longer the entree sits, the more liquid is absorbed by the rice and quinoa. If you refrigerate the recipe, you will have to add additional broth or water.
