Roasted Cabbage

Roasted Cabbage is absolutely delightful. Especially if you enjoy cabbage (which I do). This easy 4-ingredient recipe is a wonderful side dish for any entree. Particularly if you’re into eating Keto or healthy. It’s also great for lunch and reheats really well in the microwave.

I made Roasted Cabbage back in early January after New Year’s Resolutions were made. 🙂 I ate it a lot with Roasted Eggplant and Roasted Broccoli, Cauliflower and Carrots as part of a clean eating regimen. I found it totally delicious and a very pleasing way to enjoy cabbage.
I love cabbage whether it’s in soup, in casserole form, as a stir fry, in cole slaw or my favorite way, with noodles. My mom used to make Cabbage Pies when I was a kid. I loved those pies. Granted you have to acquire a taste for cabbage to be able to enjoy them. I also loved her Stuffed Cabbage Rolls. Unfortunately, they are so much work that I haven’t made them in decades. But I still really enjoy cabbage.
Roasted Cabbage is extremely economical, as well as being hearty and filling. This simple recipe can be amped up even more in flavor by adding your favorite seasonings. But I thought it was good seasoned with only salt and pepper. This is a terrific side dish if you want a healthy, low calorie, gluten free and vegan option. This tasty side is a great way to use up an abundance of cabbage, too.

I served Roasted Cabbage with Garlic Mashed Potatoes and Lemon Pepper Chicken.
The olive oil really draws out the savory flavors of the cabbage.
Here’s what I did.
I used these ingredients.
Cut cabbage down into wedges, slices or pieces. Place on a parchment paper-lined cookie sheet. Brush with olive oil.
Sprinkle generously with salt and pepper.
Follow the same directions for the red cabbage: Line a cookie sheet with parchment paper. Cut cabbage down into slices, wedges or pieces. Brush olive oil over top of cabbage.
Season generously with salt and pepper.
Bake at 400 degrees about 30-45 minutes or until cabbage is tender.
It is harder to tell when the red cabbage is done because it’s dark. Just pierce it with a fork to determine doneness.
Roasted Cabbage is healthy, clean eating, low calorie, gluten free and vegan.
If you enjoy cabbage, you’ll love it roasted.
It’s delicious served with Garlic Mashed Potatoes and Lemon Pepper Chicken.

Roasted Cabbage
Equipment
- 2 18x26" cookie sheet pans
- parchment paper
- measuring cups
- measuring spoons
- 1 pastry brush
Ingredients
- 2 large heads cabbage (one each of green and red)
- 1/2 cup olive oil or as needed
- 1/2 tsp. sea salt or to taste
- 1/2 tsp. ground black pepper or to taste
Instructions
- Line two separate large cookie sheets with parchment paper.
- Slice cabbage in slices, wedges or pieces.
- Place cabbage on parchment paper-lined cookie sheets.
- Brush with olive oil.
- Sprinkle generously with sea salt and pepper.
- Bake at 400º in a convection oven for about 30-45 minutes, or veggies darken and are cooked through.
- Remove from oven.
- Serve.
