
Poppyseed Mandarin Salad
Poppyseed Mandarin Salad is fantastic. This quick and easy salad uses just over a handful of ingredients. It’s a delicious side dish that can be whipped up in about 5 or 10 minutes. The combination of tastes from two different cheeses, dried cranberries and cashews along with a poppyseed dressing is delightful.

I made this tasty salad back in early May and served it with Easy Sausage Manicotti. I ate almost all of the salad! I let my husband get a bowlful but that was about it. 🙂 Both recipes were quick and easy and terrific for a weeknight dinner. One of the nice things about this salad is it uses a store bought poppyseed dressing. That makes it even easier to have table ready.
Poppyseed Mandarin Salad has the savory flavors of Swiss and Cheddar Cheeses and cashew nuts. But those flavors are delicately balanced with the sweet flavors of dried cranberries, mandarin orange segments and the poppyseed dressing. The combination is utterly irresistible.
If you enjoy tossed salads with fruit, this one is a dandy. I couldn’t stay out of it. 🙂

The combination of sweet and salty flavors in this salad is irresistible.

I served the salad with Brianna’s Poppyseed Dressing.

Poppyseed Mandarin Salad was excellent paired with Easy Sausage Manicotti.
Here’s what I did.

I used these ingredients.

Place lettuce mixes in a large salad bowl.

Add cheddar and Swiss cheeses.

Add dried cranberries, cashews and drained, mandarin orange segments.

To serve: Toss salad and drizzle poppyseed dressing over top of individual servings.

This gluten free recipe is heavenly.

We loved eating this salad with Easy Sausage Manicotti.

Every bite of this salad was mouthwatering.

POPPYSEED MANDARIN SALAD
(Recipe adapted from Taste of Home, Quick Cooking, 2008)

- 10 oz. pkg. hearts of romaine salad mix or other salad mix
- 11 oz. can mandarin orange segments drained
- 1 cup lightly salted cashews
- 3/4 cup sharp cheddar cheese shredded
- 3/4 cup smoked Swiss cheese shredded
- 2/3 cup dried cranberries
- 3/4 cup poppy seed dressing
Ingredients

- Layer salad mix in a bowl.
- Top with mandarin oranges, cashews, cheddar cheese, swiss cheese and cranberries.
- Refrigerate until ready to serve.
- Toss salad.
- Drizzle with salad dressing to coat.
- Serve immediately.
NOTE: You can also toss the salad and serve the salad dressing on the side; but I would not toss the salad unless you are feeding about 10 people at the same time.
NOTE: I used a combination of Butter Bliss and Green Leaf lettuces.
NOTE: I used Brianna’s Poppy Seed Dressing.

Having two different types of cheeses really increased the flavor of this salad.
