Apple Pie Overnight Oatmeal is so mouthwatering. I’ve never been into the overnight oatmeal recipes because I didn’t like working with steel-cut oats. Yes, I know they are healthier. After a few times trying to cook them on the stove top, I ended up with really tough oats (so I gave up!). Cooking them in a slow cooker for several hours is just perfect. The oats come out just right, not chewy nor tough. Cooking overnight is somewhat of a misnomer though. These oats are done in 5 hours…and that’s on a low setting in the crockpot.

I know, I know! I haven’t posted anything new in five months. 🙁 It has been kind of a horrendous and extraordinarily busy year for me. Most of you know my husband had a massive stroke a little over a year ago. In the process of trying to rehabilitate him, we’ve moved from our dream home (too much to take care of) to a smaller down-sized home north of Dallas. We love our new home, new neighbors and the new area of the Metroplex we’re in. But quite frankly, I haven’t felt much like cooking.

I’m used to making 15-20 new recipes every month, not every eight months! I feel like I’m finally getting my desire back to cook and bake. So, as to this recipe…my husband had a really high cholesterol rating back in May. So his doctor put him on a stringent diet in an effort to reduce cholesterol without medication. He had to cut out some of the stuff he was eating a lot. Cheese was a big culprit. Processed foods and sweets were others.

Anyway, I made several kinds of oatmeal without butter or milk (so they’re vegan) and without sugar because that’s a contributor to high cholesterol also. This recipe is vegan, gluten free and sugar free. While you can add maple syrup or brown sugar if you like, you really don’t need it since the apples and raisins provide enough sugar. I used oat milk but you can also use almond milk.

Slow cooking the steel-cut oats makes them soft and creamy. I hated the taste of gummy, chewy oats when I tried cooking them on the stove top years ago. This way of cooking steel-cut oats is sensational. But remember, the oats are done in about 5 hours. That’s cooking them in my slowest crockpot. If your crockpot cooks fast (even on a low setting), these may be done in even less time. If you cook them longer, the oats start sticking to the edge of the crockpot and will dry out too much.

I usually cook this recipe during the day. Then I put the cooked oats in small glass containers and store in the refrigerator or freezer until we’re ready to eat them. This batch makes 10-12 servings so it’s enough for several days or a week, depending on how many people are eating it. You can add additional oat milk or almond milk when reheating if you prefer that texture. We usually stir a little in because the oats absorb so much of the liquid they need a little more liquid after refrigeration.

Apple Pie Overnight Oatmeal is a delicious way to enjoy apples and oats! Breakfast this way is healthy, filling and very hearty. If you have a programmable crockpot that will shut off on a timer, that’s the best way to make these oats. Set the end time for around when you want to have breakfast and you’re good to go. Enjoy.

Add chopped apples, raisins, salt, cinnamon, nutmeg and vanilla.

Spray a large crockpot with cooking spray. Add oatmeal mixture.

Cook on a low setting for about 5 hours. (This is best using a programmable slow cooker because most people sleep longer than 5 hours!)

Spoon mixture into bowls. If desired, sprinkle with additional cinnamon and add apple slices.

Apple Pie Overnight Oatmeal is a mouthwatering breakfast entree that's made in the slow cooker overnight. It uses steel-cut oats, apples, raisins, cinnamon and nutmeg to give it fantastic flavor and pop. It's terrific for company and the oatmeal can be refrigerated or frozen for later use. This recipe is healthy, vegan, gluten free and sugar free. If you have a programmable slow cooker this is an easy, no fail recipe that can't be beat.

  • 1 large crockpot
  • 1 large mixing bowl
  • measuring cups
  • measuring spoons
  • 1 wooden spoon
  • 1 sharp knife to peel and dice apples

Ingredients
  

  • 24 oz. pkg. steel-cut oats (I used Bob’s Red Mill known as pinhead oats or Irish oats)
  • 48 oz. container Califia Farms oat milk (or almond milk)
  • 3 cups water
  • 1 tbsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 tsp. sea salt
  • 1 tbsp. vanilla extract
  • 4 cups apples peeled, diced (per your preference, but four cups is plenty)
  • 2 oz. sun-dried raisins
  • 1 cup apple peeled and sliced, for garnish, if desired
  • 1 tbsp.. cinnamon for garnish, if desired
  • 3/4 cup brown sugar packed, or maple syrup, if desired, for sweeter oatmeal

Instructions
 

  • Spray a large 6 or 7-quart crockpot very generously with cooking spray.
  • Combine first nine ingredients and spread into crock pot.
  • Cook on low overnight for approximately 5 hours.
  • Serve garnished with fresh apple slices and a dash of cinnamon, if desired.

Notes

NOTE: You can portion out the servings into microwavable glass or plastic containers. Refrigerate for up to one week and microwave before serving.
 
NOTE: You can also freeze the cooked oatmeal in the same type of containers. Remove from freezer and allow to defrost in refrigerator a day or so before using and microwaving as noted above.
 
NOTE:  You can sprinkle the tops of each serving with brown sugar or pour maple syrup over top if desired. But you may find the recipe is sweet enough without additional sugar.

If you don't need a sugar-free recipe, I recommend adding 3/4 cup brown sugar (packed) when cooking the oatmeal in the crockpot. That will provide plenty of sweetness for each serving.
 
NOTE: Another option is to use Stevia extract drops or Monk Fruit sugar to cut calories and sugar.

We found this sugar free recipe didn’t need any additional sugar on top of the oatmeal. But you can always add brown sugar or maple syrup if you want a sweeter oatmeal.
