
Blueberry Walnut Overnight Oatmeal

We loved how this Blueberry Walnut Overnight Oatmeal turned out. I made this one with brown sugar so it’s not sugar free, but it is one delicious homemade oatmeal recipe using steel-cut oats. I added walnuts and vanilla for flavoring. I used my typical Oat Milk from Califia Farms too which makes the oatmeal so thick and creamy.

Back in September I made several recipes that I’m finally getting a chance to post up. This oatmeal was one of them. I recommend a couple of things: Use a slow cooker with a programmable timer. Even in my slowest crockpot, this recipe only takes 5 hours. So unless you’re late to bed and early to rise, you’ll overcook this oatmeal if you’re not careful. I usually make it during the day and then put it in containers in the refrigerator so my husband can heat it up for breakfast during the week. Each batch makes 12 servings, so it goes a long way for only two of us.
Blueberry Walnut Overnight Oatmeal is great with extra blueberries and walnuts tossed over the top of each serving. If you really need a sugar-free recipe, then toss some sliced banana on individual servings as well. That will make the oatmeal sweet enough if you need less sugar.
I’ve been making a lot of steel-cut oatmeal for my husband for breakfast to lower his cholesterol. It has definitely worked. If you’re looking for a wonderful breakfast recipe for holidays, weekends or regular breakfast menus, this one is healthy, vegan and gluten free. It’s a win-win for even the pickiest eater. 🙂

Blueberry Walnut Overnight Oatmeal is so easy to make since it’s tossed into the crockpot!

We added additional blueberries and walnuts on top for an even zestier flavor.

This recipe can easily be made sugar free if you need to do that. Slice up a banana on top of each serving.
Here’s what I did.

I used these ingredients, plus water.

Pour steel-cut oats into a mixing bowl.

Add walnuts, brown sugar, salt and vanilla.

Add blueberries and oat milk.

Add water.

Stir to combine.

Pour oatmeal mixture into a greased crock pot.

Cook 5 hours on low.

Blueberry Walnut Overnight Oatmeal is vegan and gluten free.

This is a drool-worthy breakfast recipe!

We served it with additional blueberries and walnuts for added crunch and zest.

BLUEBERRY WALNUT OVERNIGHT OATMEAL
(My own concoction)

Blueberry Walnut Overnight Oatmeal
Equipment
- 1 large crock pot
- 1 large mixing bowl
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 nut chopper if nuts are not previously chopped
Ingredients
- 24 oz. pkg. steel-cut oats (I used Bob’s Red Mill known as pinhead oats or Irish oats)
- 48 oz. container Califia Farms oat milk or almond milk
- 3/4 cup light brown sugar packed
- 3 cups water
- 1 tsp. sea salt
- 1 tbsp. vanilla extract
- 2 cups walnuts chopped (measure after chopping)
- 2 rounded cups fresh blueberries washed (about 1 1/4 dry pints)
- 1/2 cup walnuts chopped, (sprinkled over top of individual servings, if desired) measure after chopping
- 1 cup blueberries sprinkled over top of individual servings, if desired
Instructions
- Spray a large 6 or 7-quart crockpot very generously with cooking spray.
- Combine first seven ingredients and spread into crock pot.
- Cook on low overnight for approximately 5 hours.
- Serve garnished with fresh blueberries and a sprinkle of chopped walnuts, if desired.
