Oh my gosh, I am crazy for this Porky Pig Breakfast Skillet! No kidding. This breakfast skillet has it all. Seasoned hash browns layer the bottom. The hash browns are topped with both Monterey Jack and cheddar cheese. The cheeses are topped with fried sausage, bacon and ham. Then two eggs, sunny-side up are slid on top. It is one of the best breakfasts we have ever eaten!

John and I have been going to lots of small diners and cafe’s for breakfast a couple of times a week. It’s a great way to learn about the new community we have moved to. I also learn all the streets and get a better handle on directions and where everything is. We have enjoyed so many delightful mom and pop places and we certainly have our favorites. We’ve even taken some friends to some of them.

My favorite breakfast item is always the “Breakfast Skillet.” I’ve had just about every variety imaginable, but “Porky Pig” is my favorite. Bacon. Ham. Sausage. Oh my! I liked these skillet breakfasts so much, I decided to make them at home. They are a bit of work, but so worth it.

Here are some tips if you want to speed up the process:

  1. Use a griddle and cook everything at one time (except the eggs, they must be cooked last).
  2. You may want to cook up potatoes (or sweet potatoes), veggies, or meats in advance. Then just toss together and heat up in your microwave or oven.
  3. Don’t leave off seasoning the potatoes or eggs. Even if you enjoy different flavors than the ones I prefer, use them. It really amps up the flavors of this breakfast skillet. You’ll find everything a little dull if you use only salt and pepper. Add your favorites. Get creative.
  4. I recommend using a non-stick skillet if you don’t have a griddle. You’ll also need something to transfer everything to. A small skillet if you heat up ingredients in the oven, or a baking dish if microwaving to heat everything up.
  5. If you want to make multiple skillets (for your whole family for breakfast), you will need a griddle and it is really better to pre-cook everything (except the eggs). Then just assemble everything the next morning and put in the oven or microwave to melt the cheese and get everything hot again.

I think I could enjoy a Porky Pig Breakfast Skillet every day of the week. Even though this recipe is for one person, you will usually get two servings out of it, especially if you add fruit or sweet rolls to the mix. These lovely breakfast skillets are hearty, filling and so satisfying. If you have issues with pork, consider substituting turkey or chicken sausage or turkey bacon and leave off the ham. But if you can eat pork, Porky Pig Breakfast Skillet is the best!

Place sausage in a non-stick skillet or on a griddle and brown both sides.

Use a hamburger masher and break the sausage up into little pieces while cooking.

Mine had very little oil, but if there is some, sop it up with paper towels. You will only need 1/3 cup for this single batch recipe. I recommend refrigerating the rest for future use.

Slice bacon in half lengthwise. Then stack the bacon on top of each other. Cut into 1/4-inch pieces.

Fry the bacon until cooked. Either use the bacon grease as lard in recipes or sop up with paper towels and discard. You will only need 1/3 cup for this recipe. Refrigerate remaining bacon for another use.

Melt two tablespoons of butter in a skillet. (Non-stick works the best). Season the potatoes with salt, pepper, parsley and rosemary.

Cook hash browns on both sides until tender. If desired, sprinkle more seasonings on the opposite side of the potatoes as well.

Add cooked bacon. Place skillets in a 350 degree oven for 5-7 minutes to melt the cheese and warm the ham (while eggs are cooking). Or if you layered ingredients in microwavable dish, you can microwave the ingredients for about 30 seconds to warm everything up.

Melt about 1/2 tablespoon of butter in non-stick skillet or on griddle. Fry eggs, sunny-side up. Sprinkle with salt, pepper, a dash of parsley and a dash of rosemary. Cook until the egg white is completely cooked through.

  • 1/3 cup Monterey Jack cheese shredded
  • 1/3 cup sharp Cheddar cheese shredded
  • 1/3 cup cooked bacon crumbled
  • 1/3 cup cooked sausage broken into small bits
  • 1/3 cup diced ham
  • 2 large eggs

Instructions
 

  • Melt two tablespoons butter in a non-stick skillet or griddle.
  • Add hash browns and sauté in butter.
  • Season with a sprinkle of salt, pepper, dried parsley and rosemary.
  • Cook potatoes until bottom is well browned.
  • Turn hash browns over and cook remaining side.
  • Transfer hash browns to a serving skillet or microwavable glass dish; set aside.
  • Meanwhile, fry sausage in skillet or griddle.
  • Use a hamburger chopper to reduce the sausage to very small pieces.
  • If necessary, drain sausage on paper towel-lined plate; set aside.
  • Stack bacon slices on top of each other.
  • Cut bacon in half lengthwise, then in ¼-inch pieces.
  • Fry bacon until done.
  • Remove to paper towel-lined plate to absorb excess grease.
  • Set aside.
  • To serving skillet with hash browns, (or microwavable glass dish), sprinkle cheeses over top of hash browns.
  • Then spread cooked meats over top.

  • Slide eggs, sunny-side up over top of meats.

NOTE: If you’re on a time crunch, it is easier to prepare the sausage and bacon in advance. Then add as needed and heat as described above.
 
NOTE: You can also pre-cook the hash browns. Use as directed in recipe.
 
NOTE: I recommend using either a non-stick skillet or griddle for this recipe. If you try to make more than one serving, it is easier to pre-cook the potatoes and meats.
 
NOTE:  This is enough for one very hearty appetite. You may find that you get two servings out of each skillet, instead of merely one.
 
NOTE: My potatoes were frozen. If your potatoes are thawed, they won't take quite as long to cook.

NOTE: You can also pre-cook the hash browns. Use as directed in recipe.
 
NOTE: I recommend using either a non-stick skillet or griddle for this recipe. If you try to make more than one serving, it is easier to pre-cook the potatoes and meats.
 
NOTE:  This is enough for one very hearty appetite. You may find that you get two servings out of each skillet, instead of merely one.
 
NOTE: My potatoes were frozen. If your potatoes are thawed, they won’t take quite as long to cook.
