Cracked Out Sweet Cornbread

This delicious cornbread recipe uses stone-ground cornmeal, cheddar cheese, honey, creamed corn, sour cream and Homemade Ranch Dressing Mix. It has amazing flavor and texture. Gluten free.

Equipment

  • 1 large cast-iron skillet or 8x12" glass baking dish
  • 1 large skillet to fry bacon
  • 1 large mixing bowl
  • 1 wooden spoon
  • measuring cups
  • measuring spoons

Ingredients
  

  • 1 cup Wayside Inn stone-ground cornmeal or other good stone ground cornmeal
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. pink Himalayan sea salt
  • 1 cup sour cream
  • 1/2 cup honey or sugar
  • 14.5 oz. can creamed corn
  • 1 1/4 cups sharp cheddar cheese shredded
  • 3 slices thick-sliced bacon cooked and crumbled
  • 1 tbsp. homemade dry Ranch dressing mix or from a Ranch dressing packet
  • 2 large eggs
  • 1/2 cup avocado oil or melted coconut oil

Instructions
 

  • Preheat oven to 450°.
  • Grease an 8x12” glass baking dish or a 10” cast-iron skillet.
  • Combine ingredients with a wooden spoon.
  • Pour into prepared baking dish or skillet.
  • Bake at 450° for 30-35 minutes or until golden brown.
