Equipment

  • 1 9x19" glass baking dish
  • 1 large mixing bowl
  • measuring cups
  • measuring spoons
  • 1 electric mixer
  • 1 wooden spoon

Ingredients

  • 1/2 cup unsalted butter 1 stick (room temperature)
  • 1/4 cup light brown sugar packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp. vanilla extract
  • 1 tbsp. cinnamon (adjust if you don't prefer a strong cinnamon flavor)
  • 1 1/3 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 3/4 cup graham cracker crumbs
  • 1 tsp. baking powder
  • 1/4 tsp. sea salt
  • 4 to 6 1.55-oz. Hershey milk chocolate bars (see note below)
  • 1 1/2 cups marshmallow Fluff DO NOT try melting marshmallows, it doesn’t work

Instructions

  • In a bowl, cream together butter, sugars, egg, vanilla, cinnamon, baking powder and salt with an electric mixer until smooth.
  • Stir in flour and graham cracker crumbs with a wooden spoon until very well combined.
  • Divide dough in half and press half of dough into an even layer on the bottom of the buttered pan.
  • Place chocolate bars over dough (break them to fit), then spread the marshmallow fluff over top of the chocolate bars.
  • Then, top the fluff with the remaining dough by forming the dough into flat pieces with your hands and laying it down (or you can roll the dough with a rolling pin and gently place it over the top).
  • Piece it together well so it fits the top and covers the marshmallow crème.
  • Bake for 30-35 minutes at 350°, until lightly browned.

Notes

NOTE: If the top is browning too quickly, you can always cover it with tin foil for the remaining baking time. Cool completely before cutting into bars, if not they may fall apart!

NOTE: Double the ingredients for a 9x13” pan. My S'Mores Bars baked in the same amount of time as for a 9x9" baking dish.

NOTE: I used 8, 1.55-oz. bars Hershey’s milk chocolate for a 9x13” baking dish.

NOTE: This recipe has a strong cinnamon flavor in the crust layer. If you don't prefer that taste, omit the cinnamon from the recipe.
