Apple Cinnamon Granola Bread

Delicious, wholesome breadmaker bread that's fantastic for a company or holiday breakfast. This one uses applesauce, apple juice, raisins, cinnamon, honey, granola cereal and both bread and whole wheat flours. This quick and easy bread is not overly sweet so it's also delightful for dinner menus too.

Ingredients
  

  • 1 cup unsweetened apple juice
  • 2/3 cup unsweetened apple sauce
  • 2 tbsp. canola oil or avocado oil for healthier choice
  • 2 tbsp. honey
  • 1 tsp. salt
  • 1 1/2 cups whole wheat flour
  • 2 1/4 cups bread flour NOT all-purpose flour
  • 1/2 cup granola
  • 1 tsp. cinnamon
  • 1 1/2 tsp. bread machine yeast
  • 4 tsp. vital wheat gluten
  • 1/3 cup golden raisins or regular raisins

Instructions
 

  • Layer ingredients in breadmaker canister in order given.
  • Place on whole wheat setting – approximately 4 hours cooking time.
  • Allow bread to rest in oven 15 minutes before removing.
  • Brush butter over top and sides of bread to prevent the crusts from hardening.
  • Allow bread to rest an additional 15 minutes before cutting down into slices.
  • 2-lb. loaf makes 10 slices or 20 half slices.

Notes

NOTE: The original directions direct you to add the raisins at the sound of the first beep in the cycle - about 30 minutes into the bread cycle. But I added mine with the rest of the ingredients.
NOTE: Homemade bread has no preservatives so it needs to be refrigerated after 2 days.
NOTE: all-purpose flour does not contain the necessary gluten to bond the ingredients together as well as bread flour. The bread may turn out crumbly. For best results use bread flour.
NOTE: I recommend using Fleischmann's yeast or bread machine yeast in any yeast bread recipe. Red Star yeast just doesn't work as well.
