Apple Pie Bread

Delicious home-baked bread for the breadmaker. This one is reminiscent of Apple Pie as it uses diced apples, cinnamon, brown sugar and apple juice concentrate in the ingredients. It's terrific for a company or holiday breakfast or as a side for dinner. If you enjoy Apple Pie, your family will love this amazing homemade bread recipe.

Ingredients
  

  • 1 cup buttermilk or soured milk (see note below)
  • 1/4 cup apple juice concentrate
  • 1 1/2 tbsp. unsalted butter
  • 3 tbsp. brown sugar packed
  • 1 1/2 tsp. ground cinnamon
  • 1 cup gala apples peeled and chopped
  • 1 tsp. salt
  • 3 1/2 cups bread flour NOT all-purpose flour
  • 4 tsp. vital wheat gluten
  • 2 tsp. dry bread machine yeast

Instructions
 

  • Place ingredients in the bread machine pan in the order listed above.
  • Select Sweet setting or basic setting and start machine.
  • Allow bread to cool about 15 minutes after finishing.
  • Brush top and sides of bread with butter to prevent the crusts from hardening.
  • Allow bread to cool 15 minutes longer before cutting down in slices.
  • Makes one (2 pound) loaf or about 10-12 large slices.

Notes

NOTE: Homemade bread has no preservatives so it needs to be refrigerated after 2 days.
NOTE: To sour milk, measure milk into a measuring cup. Add one to two tablespoons of vinegar. Allow milk to sit out on counter about five minutes to curdle. Use as a substitute for buttermilk in recipe above.
NOTE: all-purpose flour does not contain the necessary gluten to bond the ingredients together as well as bread flour. The bread may turn out crumbly. For best results use bread flour.
NOTE: I recommend using Fleischmann's yeast or bread machine yeast in any yeast bread recipe. Red Star yeast just doesn't work as well.
