Apple Snack Squares

Satisfy your every craving with these ooey-gooey Apple Snack Squares. Each brownie is filled with apples, walnuts and Butterscotch Chips which will absolutely tantalize your taste buds. Excellent dessert option for tailgating parties, potlucks, Backyard Barbecues or Fall Baking.

Equipment

  • 1 9x13" glass baking dish
  • 1 large mixing bowl
  • 1 wooden spoon
  • 1 medium mixing bowl
  • 1 whisk
  • 1 sharp paring knife
  • 1 cutting board
  • 1 nut chopper (if nuts are not previously chopped)
  • measuring cups
  • measuring spoons

Ingredients
  

  • 2 cups granulated sugar
  • 2 large eggs
  • 3/4 cup avocado oil or vegetable oil
  • 2 1/2 cups unbleached all-purpose flour (bleached flour toughens baked goods)
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. sea salt
  • 1 tsp. ground cinnamon
  • 3 cups apples peeled and diced (I used Envy, but any sweet apples like Fuji, Gala or Honey Crisp will work) (see note below)
  • 1 cup walnuts chopped (measure after chopping)
  • 2 cups butterscotch chips

Instructions
 

  • Preheat oven to 350°.
  • Grease a 9x13” glass baking dish; set aside.
  • In a large bowl, combine flour, granulated sugar, baking powder, baking soda, salt and cinnamon.
  • Stir well to combine; set aside.
  • In a medium mixing bowl, beat eggs and oil.
  • Add liquid ingredients to dry ingredients along with apples, 1 cup butterscotch chips and walnuts.
  • Stir with a wooden spoon about 3 minutes until mixture is thoroughly mixed.
  • (Mixture is very thick).
  • Spread mixture into prepared baking dish.
  • Sprinkle remaining butterscotch chips on top.
  • Bake in preheated oven for 35-40 minutes until golden brown and a toothpick inserted in center of baking dish comes out clean.
  • (See note below on baking time).
  • Cool bars completely before cutting into squares. 

Notes

NOTE: I used 2 very large Envy apples. They yielded almost 5 cups of apples. I used all of the apples. About 1 ¼ of these large apples would have yielded 3 cups apples. Because of this, the bars were extremely moist and even gooey. You may want to consider sticking to 3 cups of apples (but we enjoyed the recipe with more).
 
NOTE: Because my version of this recipe has additional apples, my Apple Squares took about 1 hour 20 minutes to bake completely.
