2 cups unbleached all-purpose flour (bleached flour toughens baked goods) 1 1/2 tsp. ground cinnamon 1 1/2 tsp. allspice 1 tsp. baking soda 1/2 cup salted butter salted (1 stick) 1 cup granulated sugar 1 large eggs 1 cup applesauce 1 tbsp. pure vanilla extract 1/2 cup raisins
Preheat oven to 400º.
Spray 15 regular-sized muffin tins with cooking spray; set aside.
In a large mixing bowl, combine flour, cinnamon, allspice and baking soda.
Stir well to make sure spices are fully incorporated.
In a separate medium mixing bowl, beat butter with granulated sugar until smooth and creamy.
Beat in egg, applesauce and vanilla.
Add liquid ingredients to dry ingredients along with the raisins.
Stir just until ingredients are moistened.
Do not overmix!
Spoon batter into prepared muffin tins, filling almost to the top.
Bake at 400º approximately 18 minutes or until a toothpick inserted in center comes out clean.
Cool muffins in pan for 10 minutes; remove pan to wire cooling rack to cool completely.
