Equipment

  • 1 12-tin regular size muffin pan
  • 1 6-tin regular size muffin pan
  • 1 large mixing bowl
  • 1 medium mixing bowl
  • 1 electric mixer
  • 1 wooden spoon
  • 2 wire cooling racks
  • measuring cups

Ingredients
  

  • 2 cups unbleached all-purpose flour (bleached flour toughens baked goods)
  • 1 1/2 tsp. ground cinnamon
  • 1 1/2 tsp. allspice
  • 1 tsp. baking soda
  • 1/2 cup salted butter salted (1 stick)
  • 1 cup granulated sugar
  • 1 large eggs
  • 1 cup applesauce
  • 1 tbsp. pure vanilla extract
  • 1/2 cup raisins

Instructions
 

  • Preheat oven to 400º.
  • Spray 15 regular-sized muffin tins with cooking spray; set aside.
  • In a large mixing bowl, combine flour, cinnamon, allspice and baking soda.
  • Stir well to make sure spices are fully incorporated.
  • In a separate medium mixing bowl, beat butter with granulated sugar until smooth and creamy.
  • Beat in egg, applesauce and vanilla.
  • Add liquid ingredients to dry ingredients along with the raisins.
  • Stir just until ingredients are moistened.
  • Do not overmix!
  • Spoon batter into prepared muffin tins, filling almost to the top.
  • Bake at 400º approximately 18 minutes or until a toothpick inserted in center comes out clean.
  • Cool muffins in pan for 10 minutes; remove pan to wire cooling rack to cool completely.
