Bacon Stuffed Cherry Tomatoes

This fabulous 5-ingredient appetizer is a great treat for tailgating parties or Super Bowl games. You won't be able to stop at one! They're labor intensive, but worth it! Gluten free.

Ingredients
  

  • 2 lbs. bacon cooked and crumbled
  • 1/2 cup green onion chopped
  • 1/2 cup miracle whip
  • 1/2 cup sour cream
  • 50 cherry tomatoes washed

Instructions
 

  • Combine first four ingredients.
  • Cut off small portion of tomato bottom (not stem top.)
  • Scoop out insides with a vegetable peeler.
  • Heap stuffing into and up over top of the tomato.

Notes

NOTE: Preparation time does not include time required to cook and crumble bacon.
NOTE: I found it easier to stuff the tomatoes with my fingers rather than a spoon. Have a wet paper towel handy to wipe your fingers before stuffing the next tomato. You may also have to wipe the outside of the tomatoes if you get the stuffing on the tomato peel.
