Baked Garlic Asiago Chicken

This is a wonderful, moist, succulent chicken dish with olive oil, garlic, Italian seasoning, Asiago cheese and bread crumbs. This entree is so quick and easy to prepare, that you can have it oven-ready in 5 minutes. It's perfect for company or holiday dinners like Mother's Day or Father's Day.

Ingredients
  

  • 2 chicken breasts
  • 1/4 cup olive oil
  • 1 heaping teaspoon minced garlic from a jar or 2-3 fresh cloves garlic, minced
  • 1/4 cup dry Italian Style bread crumbs
  • 1/4 cup grated Asiago cheese
  • 1/2 tsp. dried Italian seasoning
  • 1/4 cup shredded Asiago cheese

Instructions
 

  • Preheat oven to 350°.
  • Spray an 8x12" baking dish with olive oil cooking spray.
  • In a small bowl, stir olive oil and garlic.
  • On a plate, combine bread crumbs, ¼ cup shredded Asiago cheese and Italian seasoning.
  • Dip each chicken breast in the olive oil/garlic mixture.
  • Then dredge oil-moistened chicken in the bread crumb/cheese mixture.
  • Pat crumbs into the chicken to adhere.
  • Place breaded chicken pieces in baking dish and cover with foil.
  • Bake about 1 hour. Remove foil.
  • Sprinkle remaining ¼ cup Asiago cheese over top.
  • Bake an additional 5-8 minutes until cheese melts.

Notes

NOTE: Chicken is completely cooked when it reaches an internal temperature of 165 degrees.
NOTE: The original recipe calls for Parmesan cheese.
