Baked Garlic Asiago Chicken

This is a wonderful, moist, succulent chicken dish with olive oil, garlic, Italian seasoning, Asiago cheese and bread crumbs. The entree is so quick and easy to prepare, that you can have it oven-ready in 5 minutes. It's perfect for company or holiday dinners like Mother's Day or Father's Day.

2 chicken breasts 1/4 cup olive oil 1 heaping teaspoon minced garlic from a jar or 2-3 fresh cloves garlic, minced 1/4 cup dry Italian Style bread crumbs 1/4 cup Asiago cheese grated 1/2 tsp. dried Italian seasoning 1/4 cup Asiago cheese shredded
Preheat oven to 350°.
Spray an 8x12" baking dish with olive oil cooking spray.
In a small bowl, stir olive oil and garlic.
On a plate, combine bread crumbs, ¼ cup shredded Asiago cheese and Italian seasoning.
Dip each chicken breast in the olive oil/garlic mixture.
Then dredge oil-moistened chicken in the bread crumb/cheese mixture.
Pat crumbs into the chicken to adhere.
Place breaded chicken pieces in large baking dish and cover with foil.
Bake about 1 hour.
Remove foil.
Sprinkle remaining ¼ cup Asiago cheese over top.
Bake an additional 5-8 minutes until cheese melts.
NOTE: Chicken is completely cooked when it reaches an internal temperature of 165 degrees.
NOTE: The original recipe calls for Parmesan cheese.
