Baked Onions

Baked Onions is an absolutely outrageous casserole that is the most mouthwatering comfort food recipe ever! This spectacular casserole includes Vidalia onions, potato chips, Fiesta cheese blend, cream of mushroom soup and cayenne pepper. The combination of textures and tastes is utterly irresistible. Baked Onions is a terrific side dish that's especially good for holiday menus like Thanksgiving, Christmas or Easter. It's also delectable with barbecue!

Ingredients
  

  • 1 1/2 whopper sized onions sliced thinly, or three large onions
  • 2 cups crushed potato chips
  • 8 oz. Fiesta blend cheese shredded, (Monterey Jack, Cheddar, Queso Quesadilla & Asadero cheeses)
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1/8 tsp. cayenne pepper

Instructions
 

  • Slice onions and layer in large 9x13” or 10x15” greased baking dish (or spray with olive oil cooking spray).
  • Layer onions in bottom of prepared dish.
  • Sprinkle crushed potato chips over top.
  • Sprinkle with Fiesta blend cheese.
  • Mix mushroom soup and milk and pour over top of casserole. It will all cook down.
  • Sprinkle cayenne pepper over top of all.
  • Cover with foil and bake 1 hour at 350°, or until onions are tender.

Notes

NOTEVidalia Onions or sweet onions are the best kind of onions to use for this recipe.
NOTE: You may have to tent the foil after 35-40 minutes so it doesn't stick to the cheese in the casserole.
