Baked Pineapple

Baked Pineapple is a delicious side dish but sweet enough to serve as a dessert! This fantastic casserole has only six ingredients and can be oven-ready in five minutes. It's perfect for company or holidays like Mother's Day or Father's Day.

Ingredients
  

  • 1/2 cup unsalted butter melted (1 stick)
  • 2 large slices Sourdough bread lightly toasted and cubed
  • 2 tbsp. UNBLEACHED all-purpose flour
  • 3 large eggs
  • 3/4 cup sugar
  • 20 oz. can crushed pineapple undrained

Instructions
 

  • Combine the melted butter with the cubed bread.
  • With a mixer, whip the flour, eggs, sugar and crushed pineapple together.
  • Pour into a greased 9x9” glass baking dish.
  • Top with buttered bread cubes.
  • Bake at 350 for 30 minutes.

Notes

NOTE: I have never been able to get this to bake under 40-45 minutes so that it’s set.
NOTE: While I used Sourdough Bread because that's what I had on hand, any kind of bread can be used.
NOTE: I always use unbleached flour in everything. Regular all-purpose flour will also work.
NOTE: You can use an 8x8”, 9x9”, 8x12” or even a round pan to bake this recipe.
