Baked Pineapple is a delicious side dish but sweet enough to serve as a dessert! This fantastic casserole has only six ingredients and can be oven-ready in five minutes. It's perfect for company or holidays like Mother's Day or Father's Day.
2large slicesSourdough breadlightly toasted and cubed
2tbsp.UNBLEACHED all-purpose flour
3largeeggs
3/4cupsugar
20oz. cancrushed pineappleundrained
Instructions
Combine the melted butter with the cubed bread.
With a mixer, whip the flour, eggs, sugar and crushed pineapple together.
Pour into a greased 9x9” glass baking dish.
Top with buttered bread cubes.
Bake at 350 for 30 minutes.
Notes
NOTE: I have never been able to get this to bake under 40-45 minutes so that it’s set.NOTE: While I used Sourdough Bread because that's what I had on hand, any kind of bread can be used.NOTE: I always use unbleached flour in everything. Regular all-purpose flour will also work.NOTE: You can use an 8x8”, 9x9”, 8x12” or even a round pan to bake this recipe.
