Cajun Fries

Potatoes with a kick! Tasty Cajun fries are seasoned with Cajun Seasoning and parsley. They're healthy, low calorie, gluten free and vegan.

Ingredients
  

  • 4 large Russet potatoes peeled and sliced in long wedges for French fries
  • 2 tbsp. olive oil or more if desired
  • 1/2 to 1 tsp. cajun seasoning or more as desired
  • 1/2 to 1 tsp. parsley

Instructions
 

  • Peel potatoes, slice in long wedges and place in cold ice water for ten minutes to soak.
  • Spray a 10x14” glass baking dish with cooking spray.
  • Pat potatoes dry with towel and spread into pan.
  • Carefully sprinkle with Cajun seasoning – as much as you desire – a half to one teaspoon. Or, if you’re a big Cajun seasoning fan add more if you can handle the heat!
  • Sprinkle with parsley.
  • Bake at 350° about 30 minutes (covered or uncovered—mine were uncovered), and turn potatoes over with spatula.
  • Sprinkle with more Cajun seasoning and parsley.
  • Bake another 30 minutes or until potatoes are fork tender.
  • If desired glaze with another tablespoon or two of olive oil.

Notes

NOTE: You can cook these for a shorter time at a much higher heat but I was baking homemade bread at the time so I needed to stay at this temperature so it took a little longer.
NOTE: I used about 1/2 teaspoon of Cajun seasoning on each side of the potatoes, but feel free to use more if you like stronger Cajun taste.
