Candied Pineapple White Chocolate Cookies are heavenly. These delicious Oatmeal Cookies include candied pineapple and real white chocolate chips for a robust and delightful flavor that can't be beat. The texture is soft and chewy rather than crispy or crunchy. They're perfect for holiday baking, tailgating parties or a Christmas Cookie Exchange. 2cupswhite chocolate chips(NOT vanilla chips or premiere white baking chips)
16oz. containerParadise candied tropical fruit pieces
Instructions
In a medium bowl, cream butter and sugars with an electric mixer until smooth.
Stir in eggs and vanilla, then flour, baking powder, baking soda and salt.
Mix well; stir in oats, white chocolate chips and tropical pineapple pieces until thoroughly combined; this may take 4-5 minutes.
Roll into balls and drop onto lightly sprayed cookie sheet.
Bake at 350° for 12-15 minutes or until done.
Rotate cookie sheets on oven racks after about 7 minutes of baking time.
Cool completely

NOTE: The only place in the Dallas Metroplex that I’ve been able to find true white chocolate chips is the Kroger private selection and Trader Joe’s.NOTE: This recipe uses REAL white chocolate chips--not vanilla chips or premiere white baking chips. Those have NO cocoa in the ingredients so they are NOT white chocolate.
