Cast Iron Peach Cobbler

Cast Iron Peach Cobbler will remind you of vintage recipes from the fifties! This lovely cobbler is cooked in a cast iron skillet. Since it only uses nine ingredients, it's a relatively simple cobbler to assemble. It's filled with fresh, juicy peaches seasoned with almond extract. Then it's topped with a quick & easy topping and salted, roasted pecans. The flavors are amazing. It's a terrific summer or early fall dessert for your family and friends.

Ingredients
  

  • 4 cups peeled, sliced peaches (about 5 medium peaches)
  • 1 cup sugar
  • 1 tsp. almond extract
  • 1/3 cup unsalted butter melted
  • 1 cup UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 2 tsp. baking powder
  • 1/4 tsp. sea salt
  • 1/2 cup half-and-half
  • 1/2 cup sugar
  • 1/3 cup roasted, salted pecans or more, if desired
  • 1 tbsp. sugar or more, if desired

Instructions
 

  • Combine peaches, 1 cup sugar and almond extract in a mixing bowl.
  • Pour butter into prepared 10-inch cast iron skillet.
  • Add peach mixture to skillet.
  • Combine flour, baking powder, salt and ½ cup sugar in a mixing bowl.
  • Add half-and-half and stir to combine.
  • Dollop topping mixture over top of peaches in skillet.
  • Sprinkle 1 tablespoon sugar over top of the topping ingredients.
  • Sprinkle roasted pecans over top.
  • Bake at 350 degrees for about 55-60 minutes or until topping is lightly browned and cooked through.
