Ingredients

CHERRY COBBLER:

  • 1/2 cup unsalted butter (1 stick)
  • 1 cup UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 2 cups sugar divided use
  • 1 tbsp. baking powder
  • pinch sea salt
  • 1 cup half-and-half or milk
  • 4 to 5 cups Northwest Cherry Growers cherries pitted and halved
  • 1 tbsp. lemon juice
  • 1 tsp. almond extract

ALMOND GLAZE:

  • 1 cup powdered sugar
  • 1 tsp. almond extract
  • 1 tbsp. half-and-half

Instructions

CHERRY COBBLER:

  • Preheat oven to 375 degrees.
  • Melt butter in a 9x13” glass baking dish.
  • Meanwhile, combine flour, 1 cup sugar, baking powder and salt.
  • Add milk (or half-and-half).
  • Stir just until dry ingredients are moist.
  • Pour batter over butter in baking dish.
  • (Do NOT stir.)
  • Bring 1 cup sugar, cherries, and lemon juice to a boil over high heat, stirring constantly.
  • Remove from heat.
  • Stir in almond extract.
  • Pour over batter in baking dish.
  • (Do NOT stir).
  • Bake at 375 degrees for 40-45 minutes or until the top is brown.
  • Allow cobbler to cool completely before adding glaze.

ALMOND GLAZE:

  • Combine ingredients with a whisk and drizzle over cooled cobbler.

Notes

NOTE: If you try to substitute a thinner milk for the half-and-half in the glaze, the consistency will be off. You will have to decrease the amount, otherwise, the glaze will be too thin and runny.
