These fantastic chocolate and coconut brownies will have you drooling after the first bite! They are ooey, gooey and decadent. These jewels are perfect for holiday baking or tailgating parties. They're so quick and easy that you can have a batch ready to serve in 30 minutes.

Ingredients
  

  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar packed
  • 1/2 cup sugar
  • 1 large egg
  • 1 tsp. vanilla extract
  • 1/2 cup coconut
  • 1 cup UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 cup miniature chocolate chips

Instructions
 

  • Cream together butter, brown sugar, granulated sugar, egg, vanilla, salt and baking soda.
  • Add flour and stir well to combine.
  • Grease a 9x13" glass baking dish.
  • Press mixture into prepared baking dish.
  • Sprinkle coconut on top, then top with miniature chocolate chips.
  • Bake at 375° for 15-20 minutes.

Notes

NOTE: Be really careful on the baking time. Try to bake these as close to 15 minutes as possible as the closer you get to 20 minutes the chocolate chips will melt and soften too much. If the chocolate chips appear really soft, then refrigerate 30 minutes to an hour before cutting.
NOTE: This recipe really works better with miniature chocolate chips than regular-sized chocolate chips.
