Chocolate Chip Banana Blondies

Chocolate Chip Banana Blondies will gob smack you from the first bite! These irresistible brownies are made with chocolate chips, pecans and ripe bananas. Plus, they have a delicious browned butter icing on top. Marvelous treat for tailgating parties, potlucks and summer holidays like Memorial Day or Fourth of July. Every bite will get your engines going.

Ingredients
  

BLONDIES:

  • 2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 2 cups brown sugar packed
  • 2 large eggs
  • 1 cup unsalted butter melted (and browned, if desired (2 sticks)
  • 1 tbsp. vanilla extract
  • 1 cup ripe bananas mashed with a fork
  • 1/2 tsp. sea salt
  • 12 oz. pkg. semi-sweet chocolate chips
  • 1 cup chopped pecans or walnuts (optional)

ICING:

  • 1/2 cup unsalted butter (1 stick)
  • 1 cup light brown sugar packed
  • 2 cups powdered sugar
  • 4 tbsp. half-and-half
  • 1 cup miniature chocolate chips

Instructions
 

BLONDIES:

  • To brown butter, place in saucepan over medium heat and bring to a boil.
  • Boil, stirring constantly until lightly browned.
  • This may take five or ten minutes; set aside and cool 5 minutes.
  • Place browned butter in a mixing bowl.
  • Add sugar and mix thoroughly.
  • If the mixture has not cooled sufficiently, wait a few minutes before adding eggs, vanilla and salt. (So the egg doesn’t scramble!).
  • Mix again until thoroughly mixed.
  • Stir in flour, bananas and chocolate chips and nuts if using.
  • Mix until combined.
  • Pour mixture into a greased 9x13” glass baking dish.
  • Bake at 350° for about 40 minutes until a toothpick inserted in center comes out clean.
  • Allow blondies to cool completely before icing with browned sugar icing.

ICING:

  • Melt butter over medium heat in medium-sized saucepan.
  • Add brown sugar and half-and-half and bring to a boil.
  • Remove from heat.
  • Cool icing 5 minutes.
  • Add powdered sugar and whisk until smooth.
  • Spread over cooled blondies.
  • Sprinkle miniature chocolate chips immediately over top.
  • Allow blondies to set before cutting into bars.

Notes

NOTE: The best way I can describe the browned butter is it looks almost like there is a head on it.
NOTE: These bars are easier to cut if you refrigerate them about an hour beforehand.
