Equipment

  • 1 9x13" glass baking dish
  • 1 large mixing bowl
  • 1 medium mixing bowl
  • 1 electric mixer
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 wire cooling rack

Ingredients

CRUST:

  • 1 chocolate cake mix (I used Devil's Food)
  • 1 large egg
  • 1/2 cup salted butter melted (1 stick)

CHEESECAKE LAYER:

  • 8 oz. block cream cheese softened
  • 2 large eggs
  • 1 tsp. pure vanilla extract
  • 1/2 cup salted butter softened, or melted and cooled (1 stick)
  • 16 oz. powdered sugar
  • 1/4 cup cocoa

TOPPING:

  • 1 cup miniature chocolate chips if desired

Instructions

CRUST:

  • Preheat oven to 350°.
  • Spray a 9x13” glass baking dish with cooking spray.
  • Set aside.
  • In a medium mixing bowl, combine chocolate cake mix, egg and melted butter.
  • Spread mixture into the bottom of the prepared baking dish.

CHEESECAKE:

  • In a separate medium mixing bowl, beat the cream cheese, butter, eggs and vanilla extract with an electric mixer until smooth.
  • Gradually beat in the powdered sugar and cocoa until mixture is smooth and creamy.
  • Spread Filling over top of crust layer.

TOPPING:

  • Sprinkle miniature chocolate chips over top.
  • Bake at 350° for 45-50 minutes.
  • Allow to cool 30 minutes in pan before refrigerating.
  • Refrigerate about one to two hours.
  • Cut into bars and refrigerate until ready to serve.

Notes

NOTE: Refrigerate the bars about 2-3 hours before cutting into bars, as the bars are much easier to cut if refrigerated first.

NOTE: I found it easier to beat the cream cheese, eggs, vanilla and cocoa. Then add the powdered sugar and melted butter together but a little at a time until all of it was worked in and the mixture was smooth and creamy.
