Chopped Cucumber Caprese Salad is sensational! This awesome salad combines the best of caprese ingredients like basil, mozzarella and balsamic vinegar with grape tomatoes and English cucumbers for one amazing and delicious recipe. This recipe is both sugar free and gluten free so it's a great one to have on hand when you have family or company with special diets. We enjoy eating this light and refreshing salad for family, company or holiday dinners.

Ingredients
  

  • 1 large English or Persian cucumber quartered and sliced thinly
  • 10 oz. container grape tomatoes cut in quarters
  • 3 tbsp. very finely diced red onion
  • 8 oz. pkg. mozzarella pearls
  • 1/4 cup fresh basil cut in strips (measure amount after cutting)
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp. balsamic vinegar
  • 1/4 tsp. sea salt or to taste
  • 1/8 tsp. ground black pepper or to taste

Instructions
 

  • Place cut cucumbers, tomatoes, red onion and basil into a mixing bowl.
  • Add mozzarella pearls.
  • Sprinkle with salt and pepper.
  • Drizzle olive oil then balsamic vinegar over top of salad.
  • Combine well.
  • Refrigerate until ready to serve.

Notes

NOTE:  I doubled the ingredients in making this recipe.
NOTE: I have used any kind of cucumber in this recipe.
