Coconut Chocolate Chip Cookies

These amazing cookies add coconut and coconut extract to the classic chocolate chip cookie making them spectacular! They're extremely quick and easy. Ready in 30 minutes! They're terrific for tailgating parties, potlucks, Christmas Cookie Exchanges and family reunions.

1/2 cup unsalted butter softened (1 stick) 3/4 cup granulated sugar 1/2 tsp. coconut extract 1 3/4 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods 1/2 tsp. baking soda 1/2 tsp. sea salt 2 cups chocolate chips divided use 1/2 cup coconut 1 large egg
In a mixing bowl, cream butter and sugar with an electric mixer.
Beat in egg, coconut extract, baking soda and salt.
Add flour, 1 1/2 cups chocolate chips, and coconut.
Roll into balls and place on greased cookie sheets.
Press remaining chocolate chips in tops of cookie balls.
Bake at 350° for 14-16 minutes or until golden brown.
Rotate cookie sheets on oven racks every six minutes of baking time.
Remove to wire racks to cool.
NOTE: My cookies took 16 minutes to bake.
