Coconutty Oat Bars are rich, chewy & oh, so scrumptious. These cookie bars contain coconut, dates, pecans and oatmeal. They're absolutely terrific for Christmas Cookie Exchanges, tailgating parties, potlucks or backyard barbecues. Every bite will have you coming back for more!
2cupsold-fashioned oatmeal(can also use quick oatmeal)
Instructions
Beat butter, brown sugar, egg, vanilla, baking powder and salt until light and fluffy.
Add flour, dates, coconut, pecans or walnuts and oatmeal.
Stir with a wooden spoon until very well combined.
Spread into well-greased 12 ½” x17 1/2” cookie sheet.
Bake at 350° for 20-25 minutes or until golden brown.
Cool; cut into bars.
Notes
NOTE: Can substitute craisins or raisins for dates, if desired.NOTE: Spread the cookie mixture so that it covers the entire bottom of the pan with no gaps or holes. You may have to keep your hands moist to accomplish this.NOTE: I had four pans of bars in the oven at the same time. My bars took about 40 minutes to cook completely, rotating the pans every ten minutes.NOTE: Be very careful not to over-bake this mixture. The mixture needs to be just barely set. If you overcook the bars so they become brown, the bars will crumble trying to get them out of the pan.
