Cottage Cheese Dill Bread

Cottage Cheese Dill Bread is such a delicious home-baked dinner bread. This tasty homemade bread is so easy since it's made in the breadmaker. It uses cottage cheese, dehydrated onions and dill weed. Also, terrific for company or holiday meals, but easy enough to make for regular family dinners. Makes a 2-lb. loaf.

Equipment

  • 1 breadmaker
  • measuring cups
  • measuring spoons
  • 1 pastry brush to spread melted butter on bread after baking
  • 1 electric knife preferred, or sharp bread knife to cut bread into slices after baking

Ingredients
  

  • 3/4 cup hot water
  • 3/4 cup cottage cheese
  • 2 tbsp. Crisco shortening
  • 2 tbsp. granulated sugar
  • 1 1/2 tsp. salt
  • 4 cups bread flour NOT all-purpose flour
  • 2 tbsp. dried onion flakes
  • 1 tsp. dill seeds
  • 2 tsp. Fleishmann's bread machine yeast

Instructions
 

  • Measure ingredients in order given and place in bread canister.
  • Turn breadmaker oven on regular setting.
  • Mine takes about 3 1/2 hours to bake.
  • Allow to rest in canister about 15 minutes before removing bread from pan.
  • Butter top and sides so crust doesn’t get tough.
  • Yield: one 2-lb. loaf – about 15 half slices.

Notes

NOTE: Homemade bread can only sit out on your counter for a couple of days. After that it needs to be refrigerated because it has no preservatives and will get moldy more quickly.
 
NOTE: all-purpose flour does not contain the necessary gluten to bond the ingredients together as well as bread flour. The bread may turn out crumbly. For best results use bread flour.
 
NOTE: I recommend using Fleischmann's yeast or bread machine yeast in any yeast bread recipe. Red Star yeast just doesn't work as well.
