Cranberry Pear Overnight Oatmeal is fantastic. This delicious oatmeal recipe uses steel-cut oats and oat milk along with cranberries, pears, cinnamon and brown sugar. It's a festive, beautiful and delectable entree to your Thanksgiving or Christmas breakfast or brunch table. Enjoy it year-round if you freeze cranberries during the holiday season! This recipe is vegan and gluten free.
Spray a large 6 or 7-quart crockpot very generously with cooking spray.
Combine all ingredients in large mixing bowl and spread into crock pot.
Cook on low overnight for approximately 4 hours.

NOTE: You can portion out the servings into microwavable glass or plastic containers. Refrigerate for up to one week and microwave before serving.NOTE: You can also freeze the cooked oatmeal in the same type of containers. Remove from freezer and allow to defrost in refrigerator a day or so before using and microwaving as noted above.NOTE: Overnight oatmeal is something of a misnomer. This recipe was done in about 4 hours in my slowest crockpot.NOTE: The key to this recipe is not overcooking the oatmeal so it sticks onto the sides of the crockpot. Four hours is really all you need.NOTE: This recipe is easiest if you have a slow cooker with a programmable timer. Set the end time for when you want to serve breakfast.NOTE: I was trying to use up cranberries so I probably used closer to 3 cups.NOTE: If you need the recipe to be sugar free, omit the brown sugar and sprinkle Stevia extract or Monk Fruit sugar over top of individual servings as desired.
