Creamy Sweet Carrots

Creamy Sweet Carrots are heavenly. This easy recipe uses only 5 ingredients and can be whipped up in about 15-20 minutes. It's perfect for weeknight dinners when you need to prepare a quick side dish. But it's delicious enough to serve for company or holiday meals. Gluten free.

Ingredients
  

  • 2 lb. bag frozen crinkle-cut carrots thawed
  • Salt and pepper to taste
  • 2 tbsp. sugar
  • 1/2 stick unsalted butter (1/4 cup)
  • 4 oz. pkg. cream cheese cut in cubes
  • 1/4 cup whipping cream

Instructions
 

  • In a saucepan, melt butter and cream cheese.
  • Add the carrots, sugar, salt and pepper, if desired.
  • Stir frequently so all the ingredients blend well together.
  • Cook over low heat until carrots are hot and cooked through.
  • This will take 10-15 minutes.
  • Add the whipping cream and stir thoroughly.

Notes

NOTE: I have used either half-and-half or heavy whipping cream. Although my personal preference is heavy whipping cream.
