Creme de Menthe Chocolate Chip Brownies

Rich, decadent and minty, these chocolate chip brownies are loaded with chocolate chips, Andes creme de menthe baking chips, coconut and pecans. They'll satisfy any sweet tooth craving you have in short order. Perfect for tailgating parties, potlucks and Christmas Cookie Exchanges.

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup white sugar
  • 1 cup brown sugar packed
  • 2 large eggs
  • 2 tsp. vanilla extract
  • 3 1/2 cups UNBLEACHED all-purpose flour
  • 1 tsp. baking soda
  • 2 tsp. hot water
  • 1/2 tsp. salt
  • 2 cups semisweet chocolate chips or white chocolate chips
  • 10 oz. bag Andes Crème de Menthe Baking Chips
  • 1 cup coconut
  • 1 cup chopped walnuts or pecans

Instructions
 

  • Preheat oven to 350°.
  • Dissolve baking soda in hot water.
  • Cream together the butter, white sugar, brown sugar, eggs, vanilla, salt and baking soda/water mixture with an electric mixer.
  • Stir in flour, chocolate chips, Andes Crème de Menthe baking chips, coconut and nuts with a wooden spoon.
  • Spread mixture into a 10x17” jelly roll pan that has been sprayed with cooking spray.
  • Bake about 25-30 minutes at 350° or until a toothpick inserted in center comes out clean.
